Zippy Summer Shrimp

Reviewed: Dec. 6, 2011
Very tasty. I used peeled prawns and they were fantastic. Will definitely make again. I will omit the salt next time as the prawns didn't need any more than a pinch.

Warm Crab Parmesan Dip

Reviewed: Dec. 6, 2011
I made this, and by following the directions I gave it a 4 star. The flavour was great but it was runny. The next time, I doubled the crab and cut the mayo to 1/2 cup, which helped thicken it up and then it was a 5 star. Excellent appetizer. This one is a keeper. Try adding a few drops of hot sauce and Worcestershire sauce, some pepper and some chopped green onions to make it a bit zippier.

Bacon Wrapped Water Chestnuts II

Reviewed: Dec. 6, 2011
Excellent appetizer for potlucks and parties. I always get asked to bring these again, even from those who don't really like water chestnuts. I ended up baking them for about another half hour to make sure the bacon was well done.

Mouth-Watering Stuffed Mushrooms

Reviewed: Dec. 6, 2011
Excellent! I made these for Book Club and they were gone in short order. I used smaller mushrooms to make them bite sized, and ended up with about 30. The filling mix makes a lot, so plan accordingly. Thanks for a great appetizer!

Veal Scallopini

Reviewed: Dec. 6, 2011
This was very tasty and quick, and the mushrooms were fantastic. I'll try doubling the mushrooms and sauce next time and serve over pasta. Thank you for a great week night meal idea!

Veneto Chicken

Reviewed: Apr. 2, 2011
I made this once, using one 14oz can of diced tomatoes as I didn't have fresh on hand, and found it a good but a little bland (would have given it a 3 star). My hubby said the same. I should note that I did did not dredge the chicken in flour in an attempt to keep it the recipe as healthy as possible. After following the reviews and my mom's cooking experience, I made the following changes/additions: - 3 cloves garlic added to the onion/celery mix - 2 14 oz cans diced tomatoes in place of the 3 fresh toms. - basil and oregano to taste (fresh is best, but dried will do in a pinch) - 2 tbsp balsamic vinegar (the best you can afford) - if using cheaper vinegar (like I did), add 1 tsp sugar to balance the acidity Serve over rice. This has become one of my main meals for 'brown bagging it' dinners (I'm a shift worker). And yes, the mushrooms freeze well. Great recipe on it's own (every food preference is subjective), so thanks to Christy for posting this in the first place!

Absolutely Fabulous Greek/House Dressing

Reviewed: Mar. 16, 2009
After scaling this back to 6 servings and adding 2 tablespoons of grated parmesan cheese, we have found our new favorite greek salad dressing. I would recommend letting the dressing sit for a bit before using, as it gets better if the ingredients are allowed to saturate. I've also used it with chopped cooked chicken and romaine lettuce in a wrap, and it was delicious. Thanks for sharing!

Apple Pumpkin Muffins

Reviewed: Sep. 21, 2008
These are FANTASTIC. I halved the sugar as many suggested, and the muffins were the perfect sweetness - used 1/2 c white sugar and 1/2 brown. I didn't have a few ingredients on hand, so I omitted the apples, used olive oil instead of veg oil, and there was no struesel topping. The batter was a bit dry (maybe because of no apples?), so I drizzled some milk in to bring it all together. This made 12 good size muffins. I can only imagine how good they would be with the topping. Will definitely make these again. Thanks for sharing!

Jay's Jerk Chicken

Reviewed: Aug. 16, 2008
I omitted the jalapeno as I was cooking for the kids. This was fantastic. Even my supremely picky 10 yr old girl gave it two thumbs up, which is rare. Also, this smelled wonderful while grilling. Thanks for sharing! This will be a regular addition to our summer menu.

Boilermaker Tailgate Chili

Reviewed: Feb. 13, 2008
This is a great chili. It's thick, meaty and spicy. I did not include the sausage as I didn't have any on hand, and I halved the beef boullion and salt as other reviewers said this dish was too salty. The only other thing I did differently was I did not add beer (the last recipe I tried called for a can of guiness and I really did not like the taste), and added one cup of red wine instead. This is a keeper, and we will definitely make this one again! Thank you so much for sharing!

Angie's Dad's Best Cabbage Coleslaw

Reviewed: Feb. 13, 2008
I followed other reviewers recommendations, and cut back on the sugar and the oil, using 2/3rds of the sugar and 1/2 the oil. This was fantastic. I really like creamy coleslaw but never eat it because of the mayo and the calories. This one is a great alternative, and I will definitely make it again. Thanks for sharing!!

Garlic Prime Rib

Reviewed: Feb. 6, 2008
This was fantastic. I was a bit leary about having the oven at 500 degrees (worried about the smoke and the smell) but it was fine. The meat was tender and juicy - a MUST HAVE for bigger dinner parties.

Lime Chicken Soft Tacos

Reviewed: Dec. 22, 2007
Very good. I followed other reviewers and used cilantro instead of oregano, and I used a bit more lime than the recipe called for. Included in our soft tacos were lettuce, tomato, sour cream, and extra chopped green onions and cilantro. Will make these again - thanks for sharing!

Anniversary Chicken I

Reviewed: Nov. 26, 2007
This was a fairly good recipe, but it was a bit bland for my taste. My extremely picky eater loved the chicken, so I will make it again.

Pico de Gallo Chicken Quesadillas

Reviewed: Nov. 26, 2007
Excellent flavour. It was a little bit of work chopping then sauting everything, but the end result was worth it. One of our favorite recipes now. I followed the advice of other reviewers and used 1 tortilla, folded in half, for ease of cooking.

Chipotle Crusted Pork Tenderloin

Reviewed: Nov. 26, 2007
HOT HOT HOT!! I suspect that all chipotle powders are not created equal as some reviewers said they used the full amount with a resulting nice flavour, while others said they used only a portion and ended up with a very spicy dish. I'm glad I read these reviews!! I used only 1 tbsp of the chipotle and it was just edible - still very spicy (and I love spicy food). The flavour was very good, so next time I will use only 1 tsp. Overall this is a very good recipe. The meat was very juicy. Thanks for sharing!

Oatmeal Chocolate Chip Cookies I

Reviewed: Nov. 15, 2007
I followed other reviewers advice and cut the sugar a little bit, as well as the chocolate chips and the oatmeal. I think I would cut the sugar by half but keep the oatmeal and chocolate chips at the recommended amount. Overall, a very good cookie, and the kids loved it!

Easy French Dip Sandwiches

Excellent! I used 2 cans beef broth/consumme with only 1 can of water. Also followed other reviewers and used garlic spread on the buns and added sauted mushroom and onions. Thanks for sharing - will definitely make again!

Spiedies

Reviewed: Oct. 29, 2007
Fantastic! This is similar to a fancy restaurant version of souvlaki and the family loved it. I marinated the chicken for 2 days, and also tried it with some beef. The flavour was very good. I was a bit hesitant about the mint as I have never used mint in cooking, but it added a subtle touch and was not at all overdone. I served the meal with Spicy Yogurt Dip on the side, and a salad. Thanks for sharing! * the last time I made this I didn't have any mint, so I used organic spearmint tea and the flavour was even better!

Blackened Chicken

Reviewed: Oct. 22, 2007
This recipe was just "okay". Yes, the chicken was moist, but not very flavourful or spicy. I followed the recipe exactly, and used premium ingredients. There was almost no "heat", and the chicken was on the bland side. I get better results with store bought "Montreal Chicken Spice"...sorry.
