Quick and Easy Summer Limoncello Cake

I was really happy with this recipe! I doubled the recipe and made cupcakes, too. It was light and lemony (I added some lemon juice along with the zest just to be sure!), a nice texture, and the glaze was a perfect compliment. I got lots of compliments on it. Frosting would have made it prettier, so I might try that some time as well, but I think the glaze was just the right amount of sweetness for me. I saw someone mentioned making it with orange, and I may give that a try as well. I'll definitely make this one again!

Cinnamon Cookies I

I am not a big gingerbread cookie fan, so I thought I might like cinnamon better. My first impression was so-so. I made a crean cheese frosting for it and liked that better. And they did turn out pretty crunchy when they cooled, when I would have preferred a little softer. But everyone at work told me they were delicious. So I'll try it again, maybe decide on a few alterations to see if I can make it more to my liking!

Chewy Peanut Butter Brownies

I had a little trouble with this recipe. The first time I made it, I doubled the recipe. I had read not to overcook the brownies, but when I took them out, the sides were crisping but the center was still nearly liquid. Not sure if I made a mistake or not. But after cooking them longer, they were a hit, even with the crunchy edges. I just remade them in a 9x9 brownie pan (with the divider insert), and they turned out much better, though the center piece was still a bit gooey (that isn't necessarily a bad thing!). I melted chocolate on the top the first time, this time I did no toppings. But I'm thinking of using a peanut butter frosting or glaze. Or putting in chocolate chips next time. Or even peanut butter chips. So since I have lots of adaptations in the works, I figured this was a 5 star recipe, cause I plan on making it several more times!

Really simple. Peanut buttery and sweet and crunchy...what's not to like? As easy as Rice Krispie treats, but something a little different.

Meatloaf With a Twist

I'm not a meatloaf fan myself, but I made it for my husband and thought it was different enough I might be okay with it. It was fine, but didn't convince me to like meatloaf. And my husband thought it was a bit too much stuff, I guess the proporations weren't what he wanted...he prefers his meat straight up and his potatoes on the side apparently! Oh well.

Austrian Pancake

Made this for my inlaws. They all really liked it. I was okay about it...thin crispy edged pancakes are more my speed. If I make it again, which I might just cause it is something different, then I think next time I'll add some cinnamon to the batter, and maybe top it with powdered sugar as others suggested (with more cinnamon!) or another sauce as recommended by others instead of syrup. I think that might tip me more in its favor instead of comparing it with regular pancakes!

No Bake Peanut Butter Bars

I used a touch less sugar and a touch more chocolate. They were really yummy, and fine right out of the fridge....but they got really mushy and messy after sitting out a while. Maybe I should have added more rice krispies. But the were tasty and quick, so I'll likely make them again. For me, its hard to go wrong with anything chocolate and peanut butter!

Double Chocolate Mint Cookies

I ended up with no mint in this when I realized the mint extract I bought was a combination of spearmint and peppermint rather than the peppermint extract I intended to buy. So I added more vanilla instead and then threw Candy Cane Kisses on the top after I took them out of the oven. They were a hit at work. I was happy with them, too, so I will probably make them like that again. Though I may still try them as they were intended later as well.

World's Best Bacon Cheese Dip

I made a few tweaks to the recipe: used some cheddar with the swiss, cut back on the mayo a touch since it's not my favorite, and added a bit of bacon grease/drippings. Not surprisingly that added to the oiliness, but made it very bacony...which is always a plus in my book. We served it with baguette slices as well as crackers and I really liked it on the bread. Everyone seemed to enjoy it. I'll try it again some time.

Chocolate Peanut Butter Pudding Cookies

I usually read the reviews before baking, but I was in a hurry and skipped that. So I made a batch as is. First mistake...I'm not big on milk chocolate...shoulda seen if there was a dark chocolate pudding. When I finished baking the first pan, I thought it was too sweet and a little grainy. So before baking the next batch, I added some salt, cocoa powder and a spoonful of peanut butter. Plus, I smooshed them down into a flatter shape, since they definitely didn't spread out during baking. The results were better, but I prefer a crisper cookie to the cake type. So these still weren't quite what I wanted. Not bad, just not ones I'll likely make again.

Downeast Maine Pumpkin Bread

It was pretty darn good. Made one loaf and lots of mini muffins, half of which I topped with brown sugar sprinkles and walnuts. That's how I'll make them from now on, I think. Saving this recipe to use again for sure.

Cheese Herb Bread

Could be cheesier...but it was tasty and a good texture. I ended up adding a little bit of cheddar to it, but should have added more! I didn't have marjarom so skipped that, but added a little bit of dried minced onions...just cause it sounded good at the time. The only other adjustment I made was using a tiny bit less yeast, since several reviewers said it rose too much in their bread machines. Mine was just right! I'll use this recipe again and play around with the flavors a bit to see what else works well.

Flourless Peanut Butter Cookies

This one didn't really click for me. It was okay, but maybe just to simple? Too sweet? Can't put my finger on it. I did split between brown sugar and sugar, added a bit of vanilla. After the first batch, I added cocoa as per another review, but still didn't really like them. Guess I'll stick with classic PB cookies.

Orange Cream Cookie Mix

I used other review's suggestions, so it's only partially the original recipe. 2 eggs, 2 cups flour, a little extra vanilla, 2/3 cup sugar and 1/3 cup Tang. The dough did really look dry and I literally hand mixed them...kneading it, to make sure everything was well distributed. With enough white chocolate chips to balance the really sweet batter a bit, I get the Dreamsicle flavor. The first bite is really sweet and there's a bit of an aftertaste...that artificiaI chemically taste. But Dreamsicles never tasted like natural oranges. I read several reviews saying to underbake them, but at 10 minutes on airbake pans, they were still mostly batter in the middle. But then I left them a little too long and got crispy instead of chewy. The texture looked funny, too. Kinda bubbly or maybe pitted. That could have been something I did wrong! They were nice and orange colored, though. Not sure I like them enough to make another attempt, but they were fun to try!

Tangy Buttermilk Cheese Bread

Made it to recipe specifications since this was the first time I tried it. I really liked the texture and the taste, even though you can barely taste the cheese. My hubby apprived whole-heartedly as well. Next time I might add some garlic, onion, or herbs...but then again, it was yummy as is, so we'll see!

Sweet Leftover Turkey Salad
