I'm a college student-athlete, so most of my cooking is limited to what is quick, cheap, and healthy. Around the holidays, though, I love baking and trying new recipes with my family (in a much nicer kitchen).

Again, whatever is quick/easy/cheap/healthy. I make a lot of stews, mostly vegetarian.

I get satisfaction from making something that people enjoy, especially if it is nutritious and fast.
My cooking tragedies
First cooking experience as a child -- macaroni and cheese from a box, but I forgot to read the part about draining the pasta before adding the cheese powder. Never again!!

Oatmeal Chocolate Coconut Chewy
Great! I only bake 8-9 minutes, but I think I make them smaller as well. I also used coconut milk and omitted the white sugar all together. I think they would be deathly sweet with it in there!

Simple Scones
I don't think I will repeat this. I made the lemon blueberry version and used a food processor to shred the butter. I found the texture too moist to make into a scone and I ended up adding a lot of extra flour. Baking took longer than expected as well. The taste was alright, but not spectacular, although I did enjoy the lemon/blueberry flavor. The effort to clean the sticky gloop out of the food processor was too much, and I will return to my other scone recipe.

Low-Fat Blueberry Bran Muffins
My favorite muffin recipe so far! I get away with 1/2 cup brown sugar since the applesauce adds sweetness (sometimes I add a bit more). Definitely worth it!
