Henry and Maudie's Oatmeal Cookies

I followed this recipe to the tee, except that I used light margarine so I omitted the water. These were just what I was looking for. The cookies are moist and have lots of oatmeal in them unlike most oatmeal cookies I've seen. Great warmed up with a cup of milk!

Chewy Coconut Cookies

This recipe is super easy and really refreshing. I think maybe the only thing that would top it off would be to add toffee bits. Although, if I did that I might degrease the sugar a bit. Yummy cookie!

Cranberry Pistachio Biscotti

These are PERFECT biscotti. The other recipe I've used is (I guess) a classic Italian biscotti and uses no butter/oil, so it's pretty hard. Perfect for dipping but very difficult to eat otherwise. These, however, are perfect with or without coffee/tea. I also love the fact that the oil used is olive oil...it keeps the ingredients true to origin of the cookie!

Blueberry Pound Cake

This was very easy to make and turned out delicious. I used frozen berries as the fresh ones are still too expensive. It was still very good. I wish there had been more of the "crust" but part of the lack may be due to using a Bundt pan instead of tube pan.

Grandma's Gingersnap Cookies

These had a great flavor. We compared them to a molasses cookie recipe and they taste very similar but with the added bite of ginger and not quite as sweet. I liked them. The dough is a bit sticky, so when rolling them, it helps to have a bowl of water waiting to dip you fingers. Somehow, this wetting of your fingers keeps the dough from sticking to you.

Malted Milk Chip Cookies

This cookie flattens out WAY more than I like. I even used one stick butter and one stick margerine and they still flattened more than I wanted. I also added 1/2 cup malted milk powder. I probably will not use this again because I have another recipe for a similar cookie that I like better.

Raspberry Peach Crumble

I used frozen fruit for this. Even with only having 1 cup of raspberries, the filling was a tad tart. However, the filling was enjoyable. The topping, however, never crisped. It was mushy and soggy. I followed the recipe to a T and was very disappointed in the topping.

Lemon Poppy Seed Biscotti

This biscotti has virtually no lemon flavor and WAY TOO MUCH poppy seeds. I don't know if the 3 Tablespoons is wrong or what, but the only thing I tasted was poppy seed. I won't make this again, although it did have a good texture. Maybe use it as a base for another type of biscotti.
