Chicken Enchilada Soup III

Karen, I want to thank you so much for this recipe. It's been a while since a new recipe wowwed me like this one did & my beau just raved about it. Awesome stuff, he said. As usual, I made some adjustments & additions but the recipe, as written, proved to be a great foundation. I took a chance & found a more than adequate substitute for the 'gritty' masa to thicken the soup. Other recipes mentioned using torn up unfried corn tortillas (I used about 5 small tortillas-probably few more next time). I don't have a need for any extra masa so the tortillas worked beautifully. They practically dissolve, giving a lovely texture. Be sure to add additional cup or so of liquid. It can be stock, water, V-8 or beer, of course. I may try tequila...I encourage all of you non-gritties to please give this recipe another chance nixing the masa for tortillas. Trust me & Karen. According to our tastes, I added sauteed onions, chopped fresh jalapenos, black beans, corn & I added some red cayenne pepper, about 1/3 tsp. Be careful-cayenne is hot so add sparingly. It really wakes up the flavor & it makes your tummy warm & happy. Souper Recipe (ha)! 5 Yums Up!

Cheesy Zucchini Casserole I

I love this recipe! I put in two zucchini plants this spring and thinking that I just may be overwhelmed by squash, and instead I wish I had planted another. This recipe is so simple and tasty. I like to vary the bread and found that chewy breads such as french or italian, lend a wonderful texture. Try differernt cheeses too. Monterrey Jack or Muenster are great. Other than that, I don't change a thing except maybe less onion. This casserole, along with a salad, has become one of my favorite meals. What makes it even more special is when I go to my desert garden and pick a lovely, fresh zucchini just for this dish! Plant some zucchini and you will be well rewarded.

Tater Tot Bake

This was one of the first things I made for my new beau & let me just say that it made one helluva impression! He has a voracious appetite & likes anything I make, but he absolutely raved over this casserole. I scaled it down a bit (very easy to adjust) & I used up partial bags of frozen green beans & corn. And of course, I added mushrooms. Next time I won't cover the tater tots with the sauce as many of you recommended. Thank you for the great recipe & thank you for scoring me some major points with my beau!

Sweet and Sour Chicken I

Thank you Linda for ending my search for restaurant-like sweet & sour. Yours is so much better! What really impressed me was the batter for the chicken. I haven't had much luck with this before. I made a lot of messes and was never satisfied with the results until now. It was so easy to work with. It completly covered the chicken pieces & stayed intact when frying. As some of the others, I don't use self-rising flour so I had to add baking powder & salt to regular flour & the result was excellent. I used "Uncle Bill's Sweet & Sour Sauce" found on this website cause I had frozen pineapple juice that I need to use up. Now I am pondering all the wonderful things I can batter & fry like mushrooms, zucchini, onion rings (remove thin skin before battering), thick pickle slices (try it!), fish filets, shrimp...

Freak'n Good Ribs

This didn't work well at all. The marinade overpowered the sweet succulent flavor I expect from ribs-they tasted nothing at all like pork. I made no changes except to cut in half for the two of us. I wasted expensive baby back ribs on this and the reason for the one star is because my hubby ate them. Still seeking perfect ribs...

Cowboy Mashed Potatoes

I never met a potato recipe that I didn't like, but this one is off the scale! When I am stumped for a side dish, I turn to this one. I highly recommend serving these spuds along with steak and a salad-very yummy meal! I made no changes except for scaling down the servings and I use whatever potatoes I have on hand. My hubby says he gives this five stars too so, I guess that makes it a 10 star recipe!
