Mediterranean Fish Soup

I enjoyed this soup a lot! My husband however, thought it was a little bland. I will make it again. I followed the recipe except I did not drain the tomatoes and I added a little bit more olives than required. I also cooked it on the stove instead of a crock pot. lightly sautéed the onions and peppers before adding everything else. I wouldn't skip the fennel like others, I think that is the one spice that really adds dimension to this recipe.

Great recipe!! I used fresh basil from my garden but standard Parmesan cheese. I did add sea salt after I tossed it with pasta, it really needed it to bring out all the flavors. next time I will try toasting the pine nuts as suggested and I may cut back on one clove of garlic, it is really strong.

Seared Tuna with Wasabi-Butter Sauce

I have tried a LOT of tuna recipes on this site and this one is by far the best!!! I LOVE it! I couldn't bring myself to throw out the strained shallots so I threw them in with some fresh baby spinach and lightly sauteed them together which was also amazing, you wouldn't think that the wasabi-butter sauce would be good with spinach but it was. Also I cooked my tuna on the grill which I feel was much better. I have made this recipe many times now and every time it is wonderful. Thank you!!

Dijon Grilled Pork Chops

These were wonderful. I too used apple sauce instead and I marinaded them for just over 30 hours. they were "almost" too sweet so I might try them with 1/2 the sugar next time but I really did love them as is. Thank you!

Sugar Cream Pie I

Amazing! I too am familiar with Wick's sugar cream pie and I can honestly say I like this better! Growing up eating Wick's mean that is a BOLD statement! I followed another review posted and made my own crust which was perfect. I felt this recipe was extremely easy to prepare, even the crust was no issue at all. Just as other have said, don't get in a hurry and be sure to cook it long enough and it will set up perfectly.

WOW this was amazing! I used fresh Parsley, Basil and Oregano and probably used more than what was required. I doubled the garlic and slightly increased the amount of wine. I used canned clams and crab and it turned out wonderful. I can't wait to make this again for my extended family. My 6 year old son even loved this recipe.

Mahi Mahi with Coconut Rice and Mango Salsa

This was AMAZING, honestly one of the best Mahi Mahi dishes I have ever had let alone cooked. It was very easy to make and the flavors complimented each other well. The fish is slightly spicy, it would be wonderful served as is without the rice and Mango salsa but it really completes the dish when served together. The only thing I changed is that I grilled the fish instead of broiling it. I don't think it would have been nearly as good broiled. I will be making this again, thanks for the recipe!!

This was awesome. I did make some additions though. I added 1/3 cup sliced black olives and 1 1/2 Tbs. of capers a few twists of ground sea salt and shave Parmesan. My husband is a HARD critic and he even gave it 5 stars.

Mushroom-Stuffed Chicken Breasts in a Balsamic Pan Sauce

Thought this was great! loved the sauce it complimented the chicken wonderfully! I think I will reduce the thyme the next time, it seemed a little over powering. I used a cast iron skillet to roast the chicken and it worked great. Thanks for the recipe!!!

The Way to a Man's Heart

Thought this was a great starting point, I made quite a few changes. I added bay scallops and tiger shrimp, and garlic. I also use portabella mushrooms instead of button and I used the whole can of milk with just a tab more flour. I had to use imitation crab which was just what was available at the time :( I also subbed grouper instead of halibut. overall I think it was great, I still feel like the first step is missing something, maybe I will add garlic to wine to give the seafood just a little more flavor. I will be making this again, thank you for the recipe!

Slayer's Sweet, Tangy, and Spicy Kabobs

This was amazing!!! I only changed a couple of things. I only used 1/4 cup of soy sauce, about 8 shakes of Tabasco sauce and I had to use canned pineapple. I also used steak instead of chicken but I think it would be wonderful on chicken or even shrimp. I will be using this again for sure!!! Thank you for the recipe!

Quinoa and Black Beans

Great recipe! Easy and flavorful. I topped this dish with grilled chicken tenderloins which were seasoned with cumin, garlic, salt and pepper which complimented it very well. My husband who is not one to speak up about food actually said "wow" when he took his first bite.

Healthier Slow-Cooker Chicken Tortilla Soup

This was AMAZING! I only changed it a little. I added a can of black beans, I used a 28oz can of whole tomatoes that I mashed up and 1 15oz can of crushed tomatoes. I ended up using Anaheim peppers instead of cubanelle but from what I can tell they are very similar. I also use 1.5 lbs of chicken. I thought it would require a lot more spices but I followed the recipe and tasted it after 8 hours and it was perfect!. I watch nutrition very close and this only come out to be 86 calories per cup. (not including the tortilla) I garnished with green onion and mexican cheese. I even tried garnish with a little sour cream but it didn't add anything to the flavor.
