Tomato Basil Pasta

My family and friends loved this. I think I can give it 5 stars even though I altered it slightly. ( I know I should rate the recipe as is) I used more basil than called for, and also added about a cup of cubed mozzarella. I had to make this twice in 2 days because my 11 year old daughter was so crazy about it.

Roasted Garlic Cauliflower

This is simply the best!!! I love cauliflower, and this is my favorite recipe for it. I don't bother with the bag, just stir it all up in the baking pan. I also always use seasoning salt.

Shrimp Scampi Bake

This was very good. I used basil and added some Mrs. Dash. Would be good with some hot pepper flakes (I didn't- have 2 kids) Served with linguine and fresh parmesan.

Mayonnaise Biscuits

I found this recipe because I was out of shortening. These were great for biscuits and gravy this morning. I dont think I would serve them as dinner biscuits, because they were a bit crumbly and it would be difficult to spread butter or jam on them, but the flavor and texture was great. Thanks@!

Pork Chops in Beer

Made this tonight and boyfriend and our 4 kids ages 2-7 all enjoyed it very much. I browned the chops first with seasoning salt, and added a merlot steak/chop sauce to the ketchup mixture. Will make again with only those changes. Thanks!

Chicken Enchilada Soup III

I have made this several times and everybody loves it. My changes: use all broth, no water. A touch less mesa harina. About half the cheese I used Velveeta. Did add (hint from somebody else) a can of crushed tomateos and a can of black beans. Once I did try a can of corn, but didn't enjoy the sweet taste with the soup. Also, I make my own enchilada sauce, which is on this site, I think under Crisco Chicken Enchiladas, and is VERY easy and delicious.

Homemade Lasagna

I scaled this recipe to 32 to use to feel at a graduation party. I did not measure the seasoning, and used Italian seasoning instead. I also added an extra 29 oz can of tomato sauce and did NOT cook the noodles first, which saved lots of time. I also used ricotta and italian sausage (I was feeding italians and Croatians, I wanted authentic) They all enjoyed it!

Mini Meatloaves

I made this tonight and it was great. I had a touch over a lb of burger, used two eggs instead of one and only 1/2 cup of milk. I let the oats soak in the milk about 10 minutes. I also used seasoning salt and added garlic. I shaped into 5 loaves. My 4 year old ate two whole ones, but she's quite the carnivore anyway. I will make these again and freeze them to reheat on rushed nights.

CRISCO® Chicken Enchiladas

This is not the way I make my enchiladas, but I was looking for a homemade enchilada sauce. This sauce is wonderful and my husband says it tastes more authentic than the canned or packaged that I've been using. Will continue with my own style of enchiladas but will always use this sauce from now on.

Pork Chops with Blue Cheese Gravy

We really liked this. I used more bleu cheese, and added a little sour cream, like somebody else suggested. We have some left over and I'm going to use it on chicken next. Very rich but delicious.

Waffles I

We loved these. Mu husband actually said I could stop looking for the "one" waffle recipe for us to use. I really liked not having to separate eggs. I replaced about 1/2 cup flour for whole wheat.
