Dave's Low Country Boil

WOW! We took a chance and made this for the first time a big crowd of freinds and they LOVED IT! We added mussels, lemons, onions, garlic, beer LOTS of old bay, cajun seasoning and tabasco sauce. Took a liitle longer than 30 mins (i used larger taters), but overall fantastic. Oh, we used a turkey fryer and only added half of the crab legs to the boil and aggreed we perfer our crab legs steamed. Again, overall great recipe.

Caramel Popcorn

This was just ok for me. It was alot of work and I LOVE working in the kitchen, but the end result was worth all the fuss. BTW, you must work FAST when pouring the syrup onto the popcorn. It hardens fast.

Key Lime Cheesecake I

Not bad at all. I took the advise of many an added another 8 ounce of cream cheese and I wished I hadn't. It took away from the keylime flavor. However, I did use a can of condensed milk instead of eggs, etc. Perhaps that altered the taste as well? Will make again and stick to recipe as written.

Dominican Style Oatmeal

Very YUMMY! My 5 year old loved it, however she said "it's a little too sweet mama"! I was shocked, but agreed. Next time I'll cut the sugar down to 1 tblsp.

Breakfast Pies

Made these last night...DELISH!! Some changes...used pie crust, turkey bacon, 4 eggs, salt/pepper and some cheese. Mixed it all together and poured into "cups" and baked at 400 for 18 mins. BIG HIT!

Spinach and Feta Pita Bake

VERY YUMMY!!!! Substitued chicken for shrooms and used a tomatoe/artichoke spread and a plain pesto spread. Baked pits bread for 5 mins prior to adding toppings. Will def make again and again!

Famous Pork Chops

WHy such harsh reviews...let's face it people pork chops are VERY bland. I thought my chops were very tender! I added salt/pepper, garlic powder, & parm cheese to bread crumbs. I also tenderized my boneless chops. I buttered the pan before placing chops and placed a tsp of butter to the top of each chop. Cooked covered for time advised. Then uncovered and broiled for 10 mins.

Spinach Stuffed Chicken Breasts

Very tasty...with some changes that is. Spinach stuffing-used 1tblsp of mayo, added 1/4 cup of sour cream, dash of nutmeg, cayanne pepper, 1/3 cup sun dried tomatoes, onion powder, salt/pepper to taste, and of course garlic. Tenderized the chicken breast, stuffed, omitted the bacon. Seasoned the chicken with salt/pepper, poured the lemon/oil mixture (per other reviews). Baked covered at 350 for 30 mins, uncovered, placed under broiler for 5-8 mins. Served with roasted potatoes...delish!!!! I know it sounds like alot of salt, etc, but w/o the changes this would have been bland. Honestly I tased the spinach mixture before I added the extras...blah.

Traditional Mashed Potatoes

Great way to make mashed potatoes. I used russet (peeled) and red potatoes (with skins), and added about 2 tblsp of sour cream. Used a masher...looked very gourmet and tasted devine!

Roast Leg of Lamb with Rosemary

Very tasty! I did add 1/4 cup of Olive Oil, Balasmic Vinegar, pinch of Thyme, & Oregano. I also, added a tbsp more of honey. I used Sue Webb-Smith's method of cooking, along with basting every 20 mins or so. Cooked until thermometer read 145. My husband really enjoyed it!

California Grilled Veggie Sandwich

YUMMY! I was hestitant about making this...boy am I glad I did! I added 1/2 tsp of Oregano & a dash of fresh ground pepper to the spread (which as written is MORE than enough for me and my family-3 people). Added portebella mushrooms, green pepper along w/veggies recipe suggested. Marinated veggies in a balsamic ving. dressing. Sauted them, assembled my sandwich-used feta w/basil & sundried tomatoes. Wrapped it in foil, baked it for 15 mins @350 degrees. Can't wait to have another one!

Mexican Bean Salad

Actually Delicious Turkey Burgers

This recipe was just OK for me. Tried recipe as stated...too bland. Added soy sauce, A1 sauce...nothing really helped. I'll keep trying though.

Pistachio Crusted Chicken

Great! Didn't have cashews so I used pecans...really tasty. Love that this doesn't call for egg! Chicken was SOOOOO tender, using the oils/honey mixture. One more change...was pressed for time sor I cooked on the skillet...4-5 mins each side...delish!!!

Carrot Cake III

Delicious! Baked cake in two 8" round pans. I too used 1/2 cup white, 1/2 cup brown sugar. Added 8 ounces of crushed pineapple, and a dash of nutmeg. Didn't add pecans to the cream cheese frosting, used them to decorate the sides of the cake. Don't forget to add a thin-medium layer of cream cheese in between the layers.

Spinach Quiche

Delicious! Did make some changes, omitted the onion, used onion powder, added a dash of paprika and nutmeg. Sauted the spinach in butter. Used swiss, chedder (1/4 cup)and feta (minus the garlic/herb seasoning-sounds like alot however it wasn't. Turned out great. Used a 9" deep dish pie crust-didn't overflow. Will continue to make.
