Mexican Rice III

This is my new favorite rice! It turn out a lot better than I anticipated and was even better the next day! I didn't have any fresh cilantro so I used 1 1/2 tablespoons of dried and I didn't add green pepper but I followed the recipe pretty closely besides that. Wonderful!

Best Big, Fat, Chewy Chocolate Chip Cookie

These are pretty nice. I made them smaller and shortened the bake time to 10-11 minutes and they came out pretty good. I will be making again.

Pot Stickers Traditional

I have to say that tastewise this was a 5 star recipe for me but mine ended up being a pot of mush cause they all stuck to the bottom of the pot! I tried to stir them as soon as I put them in with the oil but to no avail. They were super tasty though...I didn't make the sauce but used a thai sesame one that I had on hand already. Anyway I will definatley make again but need to figure out how to do it so they don't stick.

Garlicky Appetizer Shrimp Scampi

Really nice! I put the shrimp on skewers and tossed them on the BBQ. Then I did the sauce on the stove and poured it over the shrimp on a bed of rice. Next time I would maybe cut back on the oil and butter and add some cream to make it...well, a cream sauce!

Sweet Potato Bake

Ok well I'm pretty disappointed in myself for not recognizing this recipe for what it is...not a dinner side dish but more of a dessert. I'm not really familiar with sweet potatoes and have only made them as fries or had them mashed. As I was making it I was thinking that it was a little strange for a regular side but when I tasted it I definatley knew...this tastes almost exactly like pumpkin pie! Although it wasn't what I had been expecting it was still good. I wouldn't make it for dinner again, but maybe for dessert.

Sarge's EZ Pulled Pork BBQ

Very good! I used a pork loin roast and hardly had any fat like others were complaining of with the other cuts. I seasoned with garlic and added a half cup of brewed coffee although I'm not really sure what it did for the meat. After cooking, I poured off the broth (freezing it to use later), shredded the meat and added a homemade BBQ sauce then put it back in the slow cooker on low for half an hour. Very tasty!

Italian Dressing Mix

Very good!! The only thing...too much salt. I just added a tablespoon and I found it was still a little too much. Next time I'll just add a half a tablespoon. Yummy!

Angel Chicken Pasta

Well I hate to go against the grain on this one but I found that this was just ok. I didn't like that the sauce was so runny. To be fair, I did use a can of chicken broth instead of the half a cup of wine it called for so it was a bit more liquid but I was hoping for a thicker sauce. I also think that the chicken should've been cut up into the sauce. I did try this the next day as leftovers and I actually enjoyed it a lot more the second time around.

Tartar Sauce I

This was excellent! I made it in the morning and let it marinade for the day. I served it as a side for 'My Crab Cakes' (from this site) and the result was so amazing!! It's better than store bought in my opinion.

My Crab Cakes

I really loved these! I doubled up on the crab and didn't have any Ritz crackers on hand so I just used 5 oz. of crushed soda crackers. Also I didn't have any Old Bay...we don't have it here so I just ommitted it all together and it still turned out wonderfully. I only wish I would've made more since I only got 4 patties even after doubling up on the crab. Awesome!

Beef Enchiladas II

SO GOOD!!! I really loved these but did do a few things differently. I added Taco Seasoning I (from this site. I NEVER buy the package stuff anymore, this stuff is fab!) to the ground beef...as well as half a can of black beans (drained, rinsed and chopped up a bit). Then I used a homemade enchilada sauce (Enchilada Sauce, from this site). The result was a new, SPICY family favorite...who cares about authenticity when it tastes awesome!!

Enchilada Sauce

LOVE IT! I was making Beef Enchiladas II (from this site) and needed a sauce. I didn't have any on hand and to be honest had never tried enchilada sauce before. Anyway, this was really nice and I will for sure be making it again. I did tweak a little and halved the recipe but added a little less chili powder and a tablespoon more flour. Superb!

Chicken Breasts Stuffed with Perfection

I really liked this but cut a lot out. I was in a hurry so I didn't bread the chicken and I didn't roll it but rather just put the spinach mixture on top of the chicken breasts. It still turned out great!

Favorite Barbecue Chicken

Well I too quadrupled this recipe but only put in half a cup each of the sugar and honey. I probably could've even pared it down a bit more. Also don't add the full amount of worcestershire, it's stong enough with just a couple of tablespoons. Pretty good...very tangy and sweet.

Chocolate Chocolate Chip Cookies III

This cookie was ok. I doubled the recipe but the dough was super sticky and hard to work with...even after I had left it in the freezer for 45 min. Next time I would divide the dough when I chilled it. Also the recommended bake time was off but perhaps my cookies were too big. Regardless I don't think I'll be making again. (That said, the end result was tasty...just too much hassle for a cookie).
