Red Pepper and Corn Relish
Great side. I bought the mixed small peppers from Costco but it was a lot of work to break them down. I didn't have cider vinegar, green onions, or maple syrup. I skipped the onion, used Balsamic, and Agave nectar, canned corn, Adobo seasoning instead of salt, and olive oil. I am really happy with this dish. Thank you!

Cowboy Caviar
Tasted great, everyone raved at my bbq. I didn't have all the ingredients on hand so I had to make due with some variations. People liked the spice, without it being overwhelming. I think ancho chile might also be good.

Glorious Sponge Cake
Excellent. My great aunt used to make a similar cake, but I never had the opportunity to ask her for the recipe. I used all purpose flour with 1 tbsp of baking soda, 2 capfuls of lemon juice and a 1/2 tsp of vanilla. Baked at 375 for 45 min. It was a little hard to remove from the pan, but eventually relented. The crust was thick and chewy and the center moist. Great! I made sure to let the cake rest for 30 min after removing it from the oven.
