Amish Slaw

This is a great change from the traditional cole slaw made with mayonaise and it keeps for a long time in the fridge. I will try cutting back a bit on the oil next time as the flavor was very oily to me for the first couple of days but seemed to blend better by the end of day 2 or day 3. Make this one at least a day ahead of time and I think you will be happy with it. Went great with BBQ ribs & baked beans as part of a meal, as well as being a good sandwich topper for lunch the next time or just to eat a bowl by itself. Overall a great recipie.

Baked Beans II

Pretty good but still tastes like a can of pork & beans with stuff in it to me. Maybe if it were thicker with more meat in it that would do it for me. Less sugar works out well, I used 1/3 C. and got good results with sweetness & flavor. Next time I will try a small amount of molassis, 1/2 lb. of browned hamburger and cook a little longer to thicken it up a bit and give it that hearty, "stick to your ribs" quality that my pre-conception of baked beans ought to have.

Barbequed Ribs

My initial response after taking the first bite of theese ribs was that you could just use a jug of Cattlemans brand BBQ sauce and get similar results without all the time, effort & ingreedients, Wrong! By the time I finished my first rib I had realized that the flavor combination of the spice rub and the sauce together was unique and awsome! Not the same as BBQ sauce. I did not double the sauce (as others recomended) and wished that I had, my 12 year old son thought they were perfect just the way they were and said they were the best ribs he ever had, Neither of us could stop eating them till' we were miserably stuffed! Don't worry about left-overs.....if there are any, they are most excellent the next day.

Dill Pickle Meatloaf

I made this recipie as stated with the exception of using 1/4 cup of garlic and herb seasoned bread crumbs in place of the sliced bread. I am a pickle freak and my girlfriend & I both loved it, very moist with lots of flavor yet it held together well........thats about all I can ask from a meatloaf! Rather than chopping the pickles for the sauce I ran them over a cheese grater (I do this for other sauces as well - tarter, etc.). I also doubled the batch and made 2 seperate pans of this, the first one I left "as is" and the second one I added 1/4 tsp. of liquid smoke to the sauce just to compare the difference. Both versions tasted great but I think that my personal preferance is to leave the liquid smoke out next time. Those of you trying to cook with less salt feel free to cut it in half or even use less than that, I don't think you will miss it.

Meatball Sandwich

Not a recipie that I would make again. Quick and easy doesn't always make up for lack of flavor. Meatballs were just okay, sauce from a jar is so-so. After eating half of the sandwich I tried to dress it up with some sliced black olives, peperochini rings and diced green pepper. That helped a little. Not something that I would serve to guests or care to eat again myself. Was worth trying though.

The Best Meatloaf

This was awsome and versatile. I used herb stuffing mix, dash of garlic powder, some sliced mushrooms, and topped with A-1. I have also topped this with a mixture (equal parts) of Heinz 57 & ketchup and kids as well as adults enjoyed it. Want some zing?...add some green chilies.

CheddarWurst® and Apple Kabob

Probobly a 4 star recipie but I'll give it 5 due to the ease of preparation and clean-up as well as the fact that everyone loves them and they fit an active outdoor lifestyle. Last night I made the skewers up ahead of time, put them in a gallon size ziplock bag and took them to the local race track in the cooler & BBQ them on the tailgate.....all the other race fans were jealouse! I had some left over ingredients so I made them again tonight at home and served with coleslaw and home made fries. The ingredients keep well in an ice chest and I will pre-make these again for my next camping trip, day at the track, beach, etc. The apples may discolor a bit so try to get all the air out of the ziplock but once grilled and glazed it not noticeable.

Beau Monde™ Dip

I don't make this dip very often but when I do get a craving for it I love it! The beau monde flavor is unique and I usualy add some chipped beef and a few chopped green onions and serve with bread.

Cream of Asparagus Soup I

I am glad that this stuff turned out so good because my girlfriend did not care for it and I ended up eating the whole pot of soup by myself. I think I added a few baby carrots for color and cut the soy sauce in half but this soup would be good with or without those changes.

Quick Quiche

This was my first time making quiche, I don't care to bake so I like the fact that I don't have to mess with a crust. I did not have swiss cheese on hand so I used colby-jack and threw a hand full of left over ham and a hand full of chopped onion into the egg mixture. This was very good and very filling but I thought it was very rich and I could almost hear my arteries and heart arguing over who was going to dial 911. I was only able to eat one small peice because of this. I will make this again but I think I will cut back on the cheese and add some mushroom next time. Overall it was good and quick & easy to make without a lot of clean up afterwards.

Hearty Hamburger Soup

very versatle food, you can make many different substitutions or add just about anything you want and it is still tasty. This is a hard dish to screw up. I used to make something similar after riding snowmachines all day and it is hearty food, serve with some type of bread and you have a meal. For a little extra flavor I like to add dash of worcestershire sauce and / or A1 sauce.

Slow-Cooker Chicken Tortilla Soup

This was an excelent soup. I think women like to say the name, men pretend like they dont know what it is, but when I make this everyone goes back for seconds..............Hmmmm. I'de bet if they re-named Quiche and started calling it scrambled egg pie more people around here would be eating it. I have made my own chips and used store bought, either works fine. I have used home made enchilada suace as well as store bought and the home made is better, if you have the time and ingredients and don't mind the extra mess. I have also added black beans with good results. I like to serve with sour cream and a lime wedge.

Delicious Ham and Potato Soup

Another good hearty winter food that will use up that left over ham. I like celery so I increase that and add a few baby carrots to sweeten and add color, corn will do the same thing. Everyone seems to like this one and can serve with biscuits and call it a meal - it is filling.

Boilermaker Tailgate Chili

I used to make chili that was a lot simpler (about 1/2 of the ingredients) and had a lot more tomatoes. This is now my favorite chili recepie, it has a lot of spice for some people but the next day the chili is great for everyone. The flavors need time to blend. I like spicy so I like it when fresh frome the stove top, some people may need a spoon full of sour cream in thier bowl or a tall glass of water, the flavor is so good though everyone eats it anyway with thier faces sweatting the first night. Would I cut down on the peppers or chili powder? NO. If you don't like spicy then think of it as "next day chili".

Ham and Bean Soup

This was a very good tasting soup and a good way to use leftover ham. I throw it in a slow cooker and go ride snowmachines all afternoon or cut fire wood, this is good hearty food to come home to in the winter & warm you up. Easily made. I like to mash 1/3 of the beans or run them through a food processor with a bit of the broth to achieve the rite consistency and flavor. vegi's are good so I increase the amounts of all. I have had to add a small amount of salt at times, depending on the ham......... wait till' the end for that decision.

Tomato and Mozzarella Bites

I love vineger or sauces with "zing". This appetizer looks great on just about any plate. TIP - grab the first couple of people that walk bye (kids will think it is fun) and get a mini-assembly line going, prep time is now just 5 minutes.

Cabbage Rolls II

This was my first attempt at making cabbage rolls. As it is, I give this recipe four stars. After reading some tips and a couple tweaks of my own it is a five star favorite that I will make again. I cut the pepper in half and doubled the onion and sauce like everyone sugested. I also added a nice handfull of sausage (1/3 - 1/2 lb.) 1/2 C of coarsly sliced mushrooms, 1/2 C of sliced zuchinni and 1/8 tsp. garlic powder. Wow, these things were the bomb and I wished I had more when they were gone! I will try puting the excess cabbage at the bottom of the dish next time. I had some left over meat mixture that I added a beaten egg to along with a big handfull of crushed ritz crackers, put into a bread pan and spread a mixture of ketchup and heinz 57 on top, called it meat loaf and baked it rite along with the cabbage rolls. Neither pan made it past the second night.

So many times I read other reviews for recipies on this site and they always tell you everything that they did different or tell you about the items that they changed. While those tips are usualy helpful, I looked at this recipie and decided to make it as it is stated. Wow - I am glad that I stuck to the recipie.
