Cheese Ball

I've been using this recipe for years. It always receives rave reviews. I can make 2 largish or 3 mediumish cheese balls from this recipe. You can freeze them! I wrap it in a ball shape in wax paper then freeze. Also I have started using the smaller pecan chips instead of chopped pecans. They seem to stick better to the outside.

Simple Waldorf Salad

reduced vinegar to 1 T and used 2 t sugar. Used about 3 apples, dried cranberries and pecans because that's what I had around.

Roast Pork with Maple and Mustard Glaze

Used it for our 5-family meal exchange group. I used cheap pork loin medallions which were a poor choice :-( But the flavor was GREAT and everyone loved it. Get some nice loin and trim it well.

Chili Sauce

Oh my... this makes unbelievably good sloppy joes! Sassy! I subbed chili powder for the allspice. Hubby and school-aged kids all loved it. (Mom, too)

Tomato Soup I

My husband, who "doesn't like tomato soup" loves this. I've made it for our cooking co-op and another family who "doesn't like canned tomato soup" really likes it, too. Planning to make it for the co-op again this month!

Cochinita Pibil

It wasn't as flavorful as I'd hoped, but it's probably my own fault because 1. I substituted jalapenos for habaneros, fearing it would be too hot, 2. I forgot to marinate it, 3. I chose not to make and use the achiote, but instead put in the equivalent amount of loose spices (omitting the anatto because I didn't want to have to grind it). It *was* very tasty in quesadillas, but as I say was just a bit too bland, even for my cooking group (which has a lot of families with preschoolers in it).

Pineapple Upside-Down Cake V

This cake was delicious, but because it's so crumbly, the top layer broke in half despite the fact that I was VERY careful when placing it. Tasty, but messy.

Easy Chicken Korma

I am in a food-exchange co-op and made this for one of our exchanges. I extended it to 6 entrees (24 servings). I think it turned out GREAT! It thawed well. I did pass the recipe on to one of the group members (because she liked mine so much) and when she made it she said it was too salty, but I don't know if she did something wrong when she made it. For our family, it had just the right amount of spicy-heat (we're kind of wimpy!). Don't buy your turmeric and garam masala in the spice section of the grocery store, go to the Asian section, or go to an Asian food market. It will be much less expensive.

County Fair Elephant Ears

I'm not sure what county fair this is from, but this rolled variety is not what's served at midwestern county fairs. Our elephant ears are plate-sized deep-fried lumps of dough sprinkled with cinnamon sugar.

Indonesian Pork Satay

Super-tasty! Easy and fun. It was lots of fun to make the marinade. It made a gigantic mess because I used the little food processor that attaches to my blender. 1 Recipe of marinade makes about 2 1/8 cups. I had the butcher cube up the meat so that saves tons of time. My husband said it almost had too much flavor, but with some rice and other sides, DEELICIOUS! 8/06 - we've had this 3 times in our freezer food exchange group and all 5 families love it (even with little kids). One of them calls it Sat-YAY!
