Coconut Ice Cream

I was skeptical that something so simple and easy would be so good. I'm so glad I tried it because it is fabulous! It reminded me of coconut ice cream I had while in Mexico. We topped it with magic shell and slivered almonds but it doesn't need anything!

Layered Chicken and Black Bean Enchilada Casserole

Spicy Pineapple Sauce

I added a teaspoon of garlic to the sauce and served it over grilled chicken that had marinated in spicy ginger marinade. I served over a bed of rice and garnished with green onions, cilantro and toasted coconut. We had sweet potatoes on the side. It all went together very well and was as yummy as it was easy to make.

Fiesta Enchiladas

I have to say I was extremely sceptical about this recipe. I was sure it was something only a health nut would think was tasty. However I am happy to admit I was wrong. Both my husband and I loved this. I ended up using a combo of salsa and tomato sauce as per another review. Also, I used lean ground beef b/c it was lower in calories than the ground turkey that was at my grocery store.

Spicy Polynesian Wrap

Country Breakfast Casserole

I loved this casserole as did my husband and his family. There was not a bite left. Instead of topping it with bread I topped it with hashbrowns that I had already cooked in a skillet. I let the casserole bake for about 30 minutes while I was frying the hashbrowns on the stove and then I pulled the casserole out, topped it with the shredded hashbrowns and continued to bake it for about 20 more minutes. Delish! Thanks for a great recipe!

Caramel Pecan Pie

I do not like traditional pecan pie so I thought I would give this a try. I am so glad that I did because it was wonderful! I added a thin layer of chocolate to the bottom and it was scrumptious!
