Eggplant Rollatini

Excellent. We love to get Eggplant Rollatini at our favorite Italian restaurant, but this is the first time I've tried making it at home. I was thinking of freezing it before baking.

Baked Pears

I baked for 35 minutes, and honestly, they could have used about 10 more. I suppose it depends on how firm you like them. I served with hot custard, and they were delicious!

Pecan Pie V

Made for Christmas Eve dinner for my family and husband...who loves the 'regular' pecan pie and was skeptical of this - until he tasted it! We all loved this one and I won't be making pecan pie with corn syrup again!

Stuffed Kielbasa

Really easy and very tasty! We used bavarian style sweet sauerkraut and low-fat pre-cooked kielbasa, and these worked very well. Homemade mashed potatoes were a big improvement, too.

Double Layer Pumpkin Cheesecake

I made this for a post-football-game party, and it was a hit! Everyone enjoyed it, and it was gone within a matter of minutes. I topped it with a pecan half on each slice and a dollop of fresh whipped cream (real, not cool whip) and a sprinkle of cinnamon. Really fast to make, bakes easily, chill overnight and serve the next day. I think room temperature is best. Thanks, AllRecipes!
