Amish Macaroni Salad

This is very good. It makes enough to serve at a fundraiser and it's different from other macaroni salads in that is a little sweeter. Plus it looks pretty. This was gone before the other macaroni salads on the board. Can't ask much more than that! Thanks Connie0751.

Skillet Meatloaf

Quick and very easy. I did add about 1/4 cup of chopped peppers (green, red and yellow). I didn't feel the tomato soup overpowered the taste. And it made great sandwiches the next day. Thanks for a really good recipe, TJ.

Chicken Breasts in Caper Cream Sauce

This was excellent. I didn't bother measuring out the spices and DH thought it was "a little dilly", but I thought it was great. This sauce (along with the spices) would be excellent on fish. Great recipe Mommyto2boys.

We really liked this dish. I was intrigued by the addition of (basically) guacamole but the flavor combination was excellent! Like other reviewers, I think next time I'll replace some of the chicken broth with white wine. Thanks for the great recipe BRENDAJST!

Strawberry Rhubarb Cream Pie

I'm not much of a fruit pie person, but DH loves them. Part of what puts me off on them is the jell-like consistency of the filling. But, I had a pint of strawberries in the 'fridge and some pie plant in the freezer, so when I found this recipe (sans jell) I made it. Here are the mistakes I made so you can avoid them: #1 - don't let your frozen rhubarb thaw, it throws off the amount. I probably ended up using more like 8 cups instead of 4. Fresh rhubarb would be the best, but frozen will work as long as you measure it frozen when it's more the size of fresh. #2 - Don't use the strawberries you buy in March or early April. They are more sour and don't have a very good flavor. Or else adjust the amount of sugar you use to compensate for their sourness. I am definitely going to make this pie again in another month with good, locally grown strawberries and my own fresh cut pie plant. Thanks for the recipe Wilma!

Easy and Quick Swiss Steak

This was pretty good. I used the Italian seasoned stewed tomatoes as well and I'm glad I did. I felt it needed more seasoning. The meat was very tender and the sauce was good over rice. I just felt there was no "depth" of flavor to the meat. Thanks for submitting RNSPLUS4.

Chocolate Eclair Dessert

Ditto what they said. Regarding the frosting - I let it set up in the frig for about an hour, then put the frosting container in the microwave for about a minute. No trouble frosting it then. Oh - and make sure you get a decent frosting because the frosting taste is pronounced. Thanks Kristie.

Blackened Shrimp Stroganoff

I made this for supper last night and it was inhaled! Even the 5 yr. old grandson loved it (he does have a rather sophisticated palate, though). I didn't have cajun seasoning, so I used Cookie's Spicy Seasoning and some garlic powder. Guess I'm going to have to buy some cajun seasoning. Great recipe Linda, thanks!

Chicken Pot Pie II

Excellent recipe. I, of course, didn't have the fozen veggies, so I nuked one potatoe, one carrot and a handful of green beans. The sauce was excellent and you could add whatever veggies you want. Great recipe. Thanks Darkholme.

Unbelievably Good Fruit Dip

You know, this had a really good flavor. I left the cream cheese out on the counter for a day and a half, but I could NOT get the cream cheese lumps out of it! My hand-held mixer won't do it. My potato ricer wouldn't either. Any suggestions?

The Ultimate Chili

This was very good. I only used 2 cans of Mrs. Grime's Chili Beans as we don't like that many beans in our chili. This had a nice, well-rounded flavor and the correct consistancy for soup. Thanks for a great recipe, Wendy.

Coffee Flavored Fruit Dip

I took this to my friend's son's going away party. He's leaving for the Air Force and I wanted to bring something unusual. Everyone raved about the flavor. It's really good with pineapple and strawberries. My hand mixer won't disperse the cream cheese well, so I had to smoosch it together by hand. It was well worth the effort. Leek Potato Mushroom Cheddar Soup

Easy Garlic Broiled Chicken

DH and I felt there was too much garlic for this chicken. I started it under the boiler and the garlic began burning, so I turned the oven to 375 and cooked it that way. It browned up nicely, just too garlicky for us.

BBQ Chicken Pizza II

This was excellent. Like others, I sauted the veggies a bit in olive oil, then added my pre-cooked chicken and Famous Dave's BBQ Sauce to the pan. Then I put everything on the pizza dough. My store didn't have Jack cheese (just Colby/Jack), so that's what I used. I'll bet pure Monterey Jack would have been better. But, on the whole, this recipe definitely goes in my recipe box. Thanks a lot Iv.

I thought this had a wonderful, well balanced flavor. And I like the addition of pinto beans instead of kidney beans. I threw everything in the crock pot on medium for about 6 hrs. It was a little thicker than we like, so I just added a bit of water to thin it some. Thanks for the great recipe, Christine L.
