Savory Breakfast Muffins

These are excellent!!! Mine turned out great--not too dry at all. The only deviation from the original recipe was that I didn't have any wheat germ to add. I just substituted extra flour for it. I also added a handful of shredded Italian blend cheese (though I don't think this would effect the moistness any). I baked mine in a mini-muffin pan (for the same amount of time) for our church's after-service Easter Brunch--I can't wait to share them!!! (of course, I had to test 1 or 2--OK, maybe 3, first!)

Corn, Sausage and Pepper Chowder

The whole family loved this!!! I stuck to the basic recipe, with just a couple changes. I didn't have any green bell peppers in the fridge, so I substituted a poblano pepper. The slightly spicy flavor of the poblano mixed nicely with the cumin, corn, and garlic. I also used frozen diced hash brown potatoes instead of the red potatoes to save some prep/cooking time (something I do with most recipes that call for potatoes). The biggest change I made, though, was substituting evaporated skim milk instead of the milk and cream so that it's much lower in fat. It was still thick and creamy, thanks to the pureed corn. Oh, and (recipe author, please correct me if I'm wrong), I think there was a typo on the amount of sausage--I think it's supposed to be 14 oz, not 4 oz. The packs of kielbasa from the store only come in 14 oz packs, so 4 oz would be just a tiny bit. I used the whole 14 oz and it seemed to be the perfect amount of sausage for the recipe.

DASH Diet Mexican Bake

Overall, this was a very good recipe. I didn't drain the tomatoes and it got a bit watery. Next time, I might mix some shredded cheese in with the tomato mixture to thicken it up a bit. It tasted good, though. My 3 yr old loved it, but my 5 yr old just picked the chicken out of it and wouldn't eat anything else :p

Cinnamon Pork Loin and Potatoes

This was the perfect fall supper! I did take some of the other reviewers' advice and it turned out perfect: I cut the potatoes/sweet potatoes in large wedges instead of slicing them and they held together nicely without falling apart. I also used 2 apples instead of 1. I combined some brown sugar with the cinnamon and instead of doing the bag thing, I just sprinkled some of the mixture lightly over the top of all the potatoes/apples so that it wouldn't be overwhelmed with the cinnamon taste. As for the gravy, I just mixed some of the pan juices with water/cornstarch and heated until thickened. The smell in my whole house while this baked was better than any candle on the market! And the mix of tastes was really great. Will definitely make again!

Bob's Habanero Hot Sauce - Liquid Fire

I have an overabundance of habaneros in my garden this year, and I was searching the web for a good hot sauce to make when I stumbled upon this one. This by far beats any hot sauce I've ever made in the past! I have to admit, I was a bit skeptical after reading the ingredient list, but with all the good reviews I decided to try it. The flavors really come together nicely, though I took some of the other reviewers' advice and decreased the mustard down to 1/4 cup and left the seeds in about half the habaneros. Very nice blend of sweet and hot!

Bierox Casserole

We thought that this was pretty good. I have no idea what "real" Bierox is supposed to taste like, so I'm not sure how this compares. My 3yr old and 5 yr old even ate this, cabbage and all, and wanted seconds. It's very cheesy (a plus for my kids!) and the crescent rolls make it really yummy. The only negative thing was it was a bit bland. Next time I might add some peppers or a can of tomatoes.

Brazilian Chicken with Coconut Milk

My family loves Mexican and Indian recipes and this was a very good alternative--kind of a combination of the best of both cuisines. I agree with another reviewer--it really is more of a curry, but with it's own unique blend of spices. The only substitution I made was instead of the jalapeno pepper and tomatoes, I used a can of Rotel diced tomatoes with jalepenos. Even the kids enjoyed this one!!!

Zippy Ground Beef Skillet

This was really good...the whole family loved it! I added a minced garlic clove, a can of rinsed and drained black beans for extra nutrition and a couple handfuls of frozen corn for color and texture. I also melted Mexican shredded cheese over all of it at the end. Will definitely make again!

Kielbasa Stew

This recipe is awesome!!!!! Even my kids (ages 5 and 3) loved it, cabbage and all. Since my husband likes stews with tomato chunks, I also added a can of stewed tomatoes to the recipe. The sour cream adds just the right finishing touch (I added about 1/2 cup, though).

Tangy Grilled Pork Tenderloin

very yummy! I used chipotle chili powder instead of regular chili powder to raise the spice level. Also added some garlic powder. The pork was very juicy and had a very nice taste (the people who said it was dry maybe grilled it directly instead of using indirect heat? ) I took the advice of some of the reviewers and heated the leftover marinade to a boil and added some white wine to thin it out and served this over the sliced pork--very good!

Easy Turkey Curry

Crab Quiche I

I loved this! I used 4 eggs like some of the other reviewers suggested, and substituted chedder cheese because I didn't have any swiss on hand. It was excellent! It would be good with bacon or even finely minced green and red peppers.
