Peanut Butter Cup Cookies

I've been making these cookies for years now and they're EXCELLENT!!!! When I was first "introduced" to these wonderful cookies they were called "Peanut Butter Tempations". There couldn't be a better name for them either, because they really are a big tempation for me and my family!!

French Toast I

I've been making my French Toast this way for years (except I don't use the nutmeg). My husband wasn't a big fan of french toast until I had him try my version...now he asks for it often. I can't tell you what the measurements are because I don't measure I just do it by eye. All breads work according to your likes & dislikes, but we like it best with the Friehoffer 'Taliano bread with the seeds or the thicker texas toast type breads. If your french toast is taking too long you may be soaking the bread too long in the batter and that definitely will take longer. Another tip is that maybe you didn't have your griddle or skillet hot enough. My trick is to melt butter on your cooking surface first and you won't have any trouble with it sticking either. Just trying to help.

Mom's Zucchini Bread

I made this Zucchini Bread recipe over the weekend and it was awesome. It came out so nice and light, fluffy, and moist!!!! I gave one of the loaves to my inlaws and they raved about it and couldn't get enough of it!!!! This is going into my "KEEPER RECIPES" files for sure and I will be making more very soon!! Thanks for such a great recipe.

Awesome Carrot Cake with Cream Cheese Frosting

I made this cake for the first time last weekend. Boy was it a great hit with the whole family!! We've been craving a real carrot cake for ages, but every one I tried to make (or even the store bought ones) were really a "SPICE cake" with very little carrot in them. I'm so glad to have found this recipe. I didn't find it overly oily as some here complained about and I just used regular vegetable oil(Wesson). I did make a few alterations but nothing major. I used walnuts instead of pecans because that's what I had available. I also added a good handful of raisins. I did think that the recipe for the frosting was way too sweet so I made the frosting from one of the recipes on this web site. It's the one called Cream Cheese Frosting II and it came out very good and not nearly as sweet. My husband has already requested another one for tomorrow for dessert after our belated St. Patty's Day meal. We can't wait to have more of this wonderful cake.
