Pumpkin Oatmeal

YUMMY!!! I have to disagree about the "raw pumpkin" taste other reviewers mentioned. I scaled recipe to 1 serving used 1/2 c. regular rolled oats, 1/2 c. milk, 1/2 c. water. Added pumpkin and spices (didn't have pie spice) and 1/4 c. raisins. My secret ingredient a dash of salt. Never make oatmeal without it-brings out the flavors. Microwaved for 5:30 mins. on high. Added 1 Tbs. maple syrup at end. Omitted cinnamon sugar. This will be in my regular breakfast rotation from now on. Thanks for the recipe!

No Bake Cookies V

My 5 year old loves to make cookies and she made this one all by herself. (of course I watched her using the stove). She and her little sister said they would eat these every day. They are very good and you don't even really have to wait a full hour for them to cool. We were digging in within 30 minutes. Thanks for sharing.

Amazing Brown Rice Salad

GREAT!! I loved this salad. I added 1/2 of a red pepper and made my own balsamic dressing. My husband didn't care for it, but he doesn't like to try new things. I didn't have any problems with it turning mushy or clumpy even the next day (it was a great leftover lunch). The trick is to not use minute rice and not to cook the rice too long. Will make this over and over again!!

Golden Sweet Cornbread

Gingerbread Biscotti

I liked this recipe overall. However, next time I will eliminate the whole wheat flour and use all white flour. While I love to use whole wheat flour most of the time, I thought it competed with the gingerbread flavor. This was also commented on by my friends. The cookies were still very good and the cook times were dead on for me. Thanks for the recipe.

Peppermint Brittle

so simple and easy. tastes just like store bought. I did a layer of dark chocolate and a layer of white. Added some real peppermint extract to white chocolate. Got rave reviews from friends.

Mom's Ginger Snaps

A very good recipe. I doubled the spices as suggested by other reviewers and it still needed more to my taste. Otherwise a great cookie. Great texture and appearance. The cook time was right on the money for me. I like my ginger snaps a little "snappy". Will definitely make this again and just add a little more ginger. Yummy!

Cranberry Pistachio Biscotti

Oh my!! This recipe is fabulous! I can't believe how wonderful this biscotti tastes. My husband would have eaten it all if I hadn't put it away. I now have to make a second batch to give out as gifts. Will be sending this recipe to my friends. GREAT!!!!! LOVE IT!!! Can't say enough about it!

Wow. Great taste, but a little too rich for me. Next time I will leave out the peanut butter chips and cut the chocolate chips down to 1/2 cup. Will make again.

Quinoa and Black Beans

I have tried quinoa before, but this was my first time to make it. WOW!!! It was better than any other I have tasted. I have recommended this recipe to everyone I know. The second time, I added kale and diced tomatoes just because I needed to use them and it was just as good. My kids request this recipe all the time (even if they had it the night before). If I could I would give this recipe more than 5 stars!!! Simple and delicious.

Mmm-Mmm Better Brownies

These were excellent brownies! I will never use a box mix again. Delish and so easy! Even my in-laws raved about these (and that is saying something). I used Hershey's Special Dark Cocoa because I LOVE dark chocolate. FABULOUS!

Good Old Fashioned Pancakes

Wow! I will never use box mix again. This was my first try making pancakes from scratch and it was a HUGE hit with the family. Added a touch of vanilla for extra flavor. Cooked over med-low heat and they came out perfect. Next time may add blueberries! THANKS!

Asparagus with Parmesan Crust
