Spinach and Orzo Salad

Simple. Tasty. Eaten with enthusiasm! I mixed the white pepper and basil in with the olive oil and vinegar before pouring it over the the rest of the ingredients, and that made it coat more evenly.

Low Sugar Oatmeal Raisin Cookie

This was a very good recipe, even though I did not use the Acesulfame Potassium sweetener. I prefer Stevia, but I really had no idea how much to use, so I tried 10 drops of the liquid extract. They turned out pretty good but I think I will use 15 or 20 drops next time. I also added 1/4 c of chocolate chips, which was quite tasty.

Strawberry Cake and Frosting II

I'm really rating only the frosting, here. I wanted a strawberry frosting recipe for my chocolate cake, so I tried this one. The basic flavor is good and it's easy to prepare, but yikes, it's super duper sweet. I might try it with less sugar next time.

Pumpkin Fluff Dip

Very quick and easy to make. Not to mention, lactose free. (No lactose in regular cool whip or in jell-o brand instant vanilla pudding mix!) Tastes like spreadable pumpkin pie. Think I might try it with more pumpkin and a bit less cool whip next time, to get the pumpkin flavor really pumped up. Perfect, quick, party-finger-food solution!

Italian Dressing Mix

Very good recipe! If you love salty, leave this recipe alone. If you prefer a little less salt, definitely half the salt or even less. This is a great recipe that you can tweak to your tastes. Works well with a variety of oils and vinegars. Thanks for sharing it!

Cinnamon Honey Butter

Very good recipe. Livens up ordinary dinner rolls. I piped this into a festive dish for a holiday party and it looks very pretty. Also tastes good with a pinch of nutmeg and ginger. Only used 1/4 c honey and 1/4 c sugar, because I wanted to bring out the spice flavor more. Very good stuff!

Super Moist Pumpkin Bread

Made this exactly as posted, except I used less coconut and more walnuts. Also sprinkled walnuts on top. I only had 1 bread pan on hand, so I made the other half of the recipe as muffins....MMmmmm! I think I like them even better as muffins. Two thumbs up from this lactose-intolerant cook!

Crispy Herb Baked Chicken

Very good starting point recipe. I added oregano, a bit of paprika, italian seasoning, and extra garlic salt. I also used half the butter and substituted a beaten egg for the rest. I used skinless boneless chicken breasts, and dipped them twice instead of once. Then baked 45 mins, turning once, and drizzling with just a tad of butter. Delicious and crispy!
