Mashed Potatoes with Fried Mushroom, Bacon, and Onion

Black Bean, Sausage, and Sweet Potato Soup

This was a hit with the family. I used smoked sausage the first time and the second I used Jimmy Dean hot sausage. That was really good, hot and lightly sweet. I also used roasted onions instead of using green onions. I wasn't sure how the black beans would look in the soup so first time I used navy beans. Both beans were good in the soup.

Apple Pie II

This is THE BEST apple pie I have ever tasted. I am not fond of pie in general, but wanted to try it as my family loves it. I used the orange juice, like someone had suggested, added 1 tsp. vanilla, 1/2 tsp. cinnamon, 2 dashes nutmeg. A keeper!

This is WONDERFUL! I am from Louisiana, and have had these before, but never actually made one myself. It does make it easier to buy the turkey, chicken and duck already deboned. Then you can make this your own recipe by using your favorite stuffing and spices, though it is hard to beat the original cajun spices. Laissez les bons temps rouler!

This is a recipe my mother-in-law always used. She's passed on now and I thought I'd never find the recipe. THANK YOU ELAINE!!! This is a family favorite. So easy to make and much less messy to eat!

Tex Mex Potato Soup

SO GOOD! The only thing I changed was to use 2% milk instead of cream (it worked just fine) and smoked sausage we buy locally, instead of ham. (not much of a ham fan) The flavors were great, this is a real comfort food!

I have made this several times. I have substituted orange juice for water, an orange juice/pineapple juice mixture & an apple juice/orange juice mixture for the water. On all I used 2 cinnamon sticks instead of 1. Fabulous! I also substituted some of the white sugar with brown sugar. Equally yummy. I also tried it the original way, but added an extra cinnamon stick. It is really good when you get the mixture thick. I used local muscadine wine. No matter how it is fixed, it is hard to beat! A real crowd pleaser.

Absolutely Ultimate Potato Soup

I changed a few things in this recipe. I just boiled the potatos in the chicken broth, not sauteing them. While they cooked I got the other ingredients ready. Since the potatoes had a longer cooking time, they thickened enough not to need the butter/flour mixture. I used ½ lb. bacon and ½ lb. smoked link sausage, 2% milk instead of cream, and 1 cup shredded smoked gouda cheese, and 1 cup shredded cheddar. Also added a can of cream of mushroom soup. Followed the rest of the recipe, though. I wanted to trim a few calories, if possible. I patted the grease from the bacon and sausage and used olive oil to saute. It was a hit with the family. I do plan to try this going strictly by the recipe.

Summer Nights Eggplants

The first time I made this we loved it, although I used cheddar instead of feta. Did take a little longer cooking time, though. Second time I just used some things I had on hand - leftover dirty rice and mexican cornbread in the place of breadcrumbs. That was great, too. Thanks for the great recipe.

Eggplant Rounds

Really good. Instead of plain cornmeal I used Martha White Mexican Cornbread Mix, and fried in small amount of olive oil. Even my kids liked it.

Avocado Soup with Chicken and Lime

I really like this recipe. No one else at my house would try it, though. Anyway, the second time I made this I used 2 avocados (I LOVE avocado) pureed them -(I liked the creamy texture), and used pre-packaged fajita chicken strips for easier preparation. I also used corn chips both times. I adjusted the seasoning a little (Tony Chachere's), just to kick it up a notch because of the extra avocado. YUM!! Definitely a new comfort food for me! FOLLOW-UP: You might not want to use chicken buillion cubes for the broth. I tried that when out of canned broth and it is WAY too salty.

Bloomin' Onion Dipping Sauce

Thanks for a recipe that does NOT include mayonnaise!!! This is really good. My son tried a variation of BBQ sauce in place of the ketchup for a chicken strip dip. It was a hit with the kids.

Fruit Pizza

This was great! I used strawberries, bananas, kiwi, blackberries, raspberries, and peaches. I only had a few blueberries, so I scattered them over the pizza. I drizzled powdered sugar mixed with water, and t. lemon juice over fruit. Then lightly sprinkled coconut flakes over that. Everyone at our meeting loved it. Will definitely make this again. The marshmallow with the cream cheese makes all the difference!

Orange Cream Milk Punch

This is wonderful! It is so nice to have a punch without pineapples or pineapple juice in it! The last time I made this I almost panicked when I realized I was out of milk. I didn't have time to get some, so I improvised with a can of sweetened condensed milk, with a a couple of cups of evaporated milk plus water to make milk (as directed on can). I didn't have a drop left over....(but it added a ton of calories!)

Texas Caviar I

This is really good, a refreshing difference from bottled salsa. I did add corn to ours. We also decided this tasted better the next day, but the dressing was too strong tasting after only a couple of hours. So I tried it again with 1/2 Italian dressing and 1/2 roasted red pepper vinegret dressing. We really liked that. I also used red, yellow and orange bell peppers, and a couple of times a bit of avacado. I Will definitely be using the recipe regularly.

Navy Bean Soup I

Great recipe. Didn't have ham so I used a little smoked bacon and smoked sausage. Instead of canned tomatos I added a chopped roma tomato. The fam loved it. Great with french bread and a salad! Will definitely use this recipe again and again.
