Zucchini 'Noodles'

Exactly the way I want to eat zucchini. I left out the garlic and parm and sliced them pretty thick and it still turned out awesome.

Nice basic recipe if you use it as a starter. It needs some extra ingredients to make it a stand out. Next time I will probably add diced green chilies and shredded cheese. I do agree with other reviewers about the amount of potato. I only used 2 and it was more than enough.

Zucchini Cookies

Black Bean and Chickpea Hummus

Good recipe. I made 2 batches, one with curry and one without (sorta had to, because what do you with half a can of chickpeas). Vastly prefer the batch without the curry. I also followed the previous reviewers advice to limit water. Perfect texture.

Cranberry Orange Cookies

Yummy cookie but I have to agree with other reviews-this is a very sweet recipe. Next time I wll cut back on the suger. I also recomend using an organic orange if you are using fresh zest.

Chicken Pesto Pizza

Great quick recipe. I used leftover rotissery chicken, pesto from a previous dinner and fresh pizza dough from the grocery store. This would be a great dinner to serve company.

Cheese Ravioli with Fresh Tomato and Artichoke Sauce

This recipe is a keeper. I made this for a non-vegetaian crowd and it was a huge hit. Very light and filling. I garnished with feta and followed other reviewers advice and simmered the sauce longer. This recipe is all about fresh tomatoes. Don't even think about using canned!

Beer Bread I

This is a great fool proof quick bread. I use Shiner beer and serv it with strawberrie freezer jam. I followed other reviewers suggestion and increased the sugar to a third cup and poured melted butter on top before baking. My dinner guests don't believe how simple this recipe is and actually insist I make it in front of them!
