Mango Madness Salad

I made this salad for a 'healthy' potluck lunch and it was a huge hit. I made it the night before and kept refrigerated until we were ready for lunch, which allowed the fruits to blend together.

Owen's Veggie Stir-Fry

The mix of vegetables in this recipe is great. I've made it a few times now and always find it comes out a bit too 'saucy' when I use the specified amount of stir-fry sauce so I cut back on that just a bit.

Aussie Chicken

Make sure you pound the chicken. It will take forever to cook unless the chicken is properly pounded. Generally, I thought this was a great recipe. The honey mustard sauce was great. I sauteed the mushrooms before I put them to bake with the chicken. Also, I served it with scalloped potatoes instead of pasta. A big hit with the family.

Three Cheese Garlic Scalloped Potatoes

Absolutely wonderful. I omitted the provolone cheese (I couldn't find it at the grocery store) and just added extra shredded cheddar cheese. A big hit with the family.

Simple Pancakes

Very simple and very easy to make. The butter kept lumping for some reason, so I took the butter out altogether. Not sure what I was doing wrong. Other than that, they came out great.

Garlic Mashed Potatoes Secret Recipe

Great recipe. I used mozarella cheese instead of romano cheese and basil instead of oregano, and everything worked out fine (I wasn't being inventive; we just didn't have the right ingredients). Very tasty.

Garlic Chicken

I'm not a big fan of garlic, but everyone else who ate it thought it was great. I always soak the chicken for 30-45 minutes in lemon juice and salt (after it's been cleaned and before it's been cooked), which seemed to compliment the garlic very nicely. I also sprinkled some lemon juice on the chicken before it went in the oven.
