Pasta Melanzana

Good stuff. I added some chicken and used feta instead of parmesan. A tasty, easy alternative use for eggplant.

Tomato Alfredo

This was great, and so easy for a weeknight! The sour cream adds a great zip compared to using cream. I did make a few changes. I started by sauteeing garlic and shallots in a little olive oil. Then I added crushed tomatoes to that (it's what I had on hand) and followed the recipe from there. Added a bit of fresh basil at the end and served it over tortellini. Delicious!

Tomato Basil Salmon

This was great. I was looking for an alternative to the usual soy-sauce-based marinades I use for salmon, and this was perfect. The tomato flavor really goes nicely through the fish. A deceptively simple recipe that turns out awesome.

Peanut Noodles

The first time I made this, I found the sauce good but a bit thick. The second time, after some adjustments inspired by the reviews, it's one of my new favorites. I added some garlic and fresh shrimp at the beginning along with the green onions. Subbed brown sugar for white, and omitted the vinegar. I also added a can of coconut milk at the end, simmered the whole shebang for about 15 mins. and served over jasmine rice. Delicious! With the coconut milk, I think the proportions of peanut butter and soy sauce are perfect. I'll be using this sauce as a base for chicken, shrimp, mixed veggies, etc. Great flavor!

Lemon Cream Pasta with Chicken

I thought this was great. Like others, I sauteed the chicken with fresh garlic and pepper rather than baking it. I added some white wine to the chicken broth before cooking the pasta. At the end when I was stirring everything together, I tossed in a handful of parmesan (I only used about 1/3 cup of cream). This was a nice twist on the standard alfredo - it got nice and creamy even without a roux. Next time I'll experiment with adding mushrooms, red pepper, or whatever veggies I have on hand. Definitely a keeper!

Honey Ginger Shrimp

This was fantastic. I went easy on the red pepper since I have a low tolerance for spice. I also used fresh ginger and substituted green onions for yellow, since that's what I had on hand. Tons of flavor and pretty healthy too. An easy weeknight recipe I will definitely add to my rotation!
