Rich Chocolate Frosting

Excellent. I ran out of cocoa so used 2 cups cocoa and 1 cup chocolate soy milk (as we have lactose intolerant family). Added milk as I reached desired consistency.

Marshmallow Popcorn Balls

Very easy! Added 1/2 C brown sugar as others recommended and M&Ms. Need to add candies after almost completely cooled or they melt when forming into balls.

Holiday Peppermint Bark

So easy! I made it two ways--with just white chocolate chips as recipe calls for, and with semi-sweet choco chips bottom layer, then white choco chip layer as other reviewers mentioned. Gave as gifts.

Chewy Coconut Cookies

They truly stay chewy, and my family enjoys them. Nice alternative to sugar cookies, esp if you have leftover coconut from another recipe.

Shepherd's Pie VI

Didn't do carrots; instead just added frozen peas and corn on top of meat which is what I had on hand. Used leftover Thanksgiving mashed potatoes (a lot!). Texture was mushy, so my one picky child gagged at it; the rest of us enjoyed. Tasty, but not spectacular.

Downeast Maine Pumpkin Bread

Delicious! Used fresh pumpkin (which has more water content) and omitted water. Put in mini loaf pans and didn't have to alter time in recipe, and baked evenly. Followed others suggestions with subbing some of the oil for butter and using 1 C brown sugar + 2 C white sugar. A keeper!

Spanish Rice I

Thai Ginger Soup

Delicious and quick soup to make. Didn't add fish sauce b/c never have on hand. Had leftover coconut milk from another Thai recipe and worked great when I halved the recipe to make 2 servings. I already had diced cooked chicken, which was a time saver.

Old-Fashioned Green Beans

My 2 and 4 yr old and hubby loved it, and also made it for another family and they liked it! Don't use maple or brown sugar bacon...I accidentally did and with the brown sugar in the recipe it was just a little too sweet. Next time I'll use regular bacon or smoked bacon.

MMMMM... Brownies

Tasted GREAT! I needed 1.5x the recipe but only had 1 cup of choco chips, so I used a whole 8oz box of Baker's semi-sweet chocolate squares that I had on hand and broke it into chunks for easier melting (and it made about 1.25 cups of chunked chocolate). I put it in a 11x7 casserole dish and the brownies came out too thick...next time I'll use 9x13 when I 1.5x the recipe.

Festive Fudge

Jamaican Beef Patties

We loved the recipe with the few changes I made based on other reviews. 1) Added 2 cloves garlic, shredded carrot, frozen peas, and approx. 1/2 tsp allspice to the meat mixture. 2) Doubled the pastry mix, which made 8 good-sized, hearty patties. Chilled pastry mix while browning beef mix based on another review. Was nervous about how the pastry was working out when I doubled it, needed to add just a little more water so it wasn't super crumbly. Came out great!

Extra Easy Hummus

With the changes I made based on previous suggestions, it was delicious. I decreased cumin to 1 tsp, added extra clove garlic, and 3/4 tsp lemon juice. I had already drained chick pea juice, so I added water until desired consistency. For that sesame taste, next time I may try substituting the olive oil with sesame oil to see how it turns out.
