Oven Scrambled Eggs

Quick Chicken Parmesan

Quick and easy! Tweaks: thinned the breasts to cook faster; sprinkled plain bread crumbs and Italian seasoning on top of the cheeses. Served with crescent rolls instead of noodles. Husband and tweens were happy, so I'm happy - will make again!

Sauteed String Beans

Yum! Following the results of other reviewers, I skipped the cocktail onions, and used jarred, minced garlic instead of garlic powder. Delicious dish!

Burgundy Pork Tenderloin

I needed a quick, easy recipe, and this fit the bill! I used a mandolin for super thin onion slices and doubled the gravy mix for a thicker sauce - lovely!

Easy Quiche

This is one of my go-to recipes for my family, and as a meal to serve or give others. I always split it into 2 pie dishes (decreases baking time to 35 minutes), and often substitute the ham and broccoli for other meats and veggies (whatever is on hand). A fan favorite was chopped bacon and sauteed onions! Another plus is that the mix freezes well in a Ziploc to save for later; just thaw and prepare as directed. It's great for leftovers, too -- no soggy crust like traditional pies/quiches. YUM!

Chicken Chipulos

I was out of some ingredients for our usual "enchilada casserole", so I tried this instead. I omitted the onions (picky 5-year-old), and switched to corn tortillas. Also subbed cream of celery for cream of chicken, and added some garlic powder and cumin. Tasty! FYI, since the chicken is already cooked, it only takes about 30 minutes for this casserole to finish.

French Toast II

I cut the recipe to 8 servings; ignored the egg count, and used 4; and used only 4 slices of challah bread. It was the perfect amount of egg mixture for the long, 1-inch thick slices of bread. I was leery of the nutmeg (I don't even like egg nog), but used the full amount anyway and was not disappointed! My husband and kids approve.
