Unbelievable Popovers

After making a lot of hockey pucks, I finally got this down. Let your all of your ingredients get to room temp first. Place oven rack on top shelf, place green olive size chunks of butter in bottom of muffin tins then preheat the tin in the oven to allow the butter to melt. After 20 minutes, reduce heat and cook only 5-10 minutes longer.

Favorite Old Fashioned Gingerbread

I've made this 4 times. After a few adjustments, I've found a keeper. I omit the spices in the recipe and add 2 Tbs. Trader Joe's Pumpkin spice with 1 tsp.ginger. Add 1/2 cup hot water, 1/2 cup unsweetened apple sauce. Then bake for 40 minutes for the 9X9 pan. More moist with a ginger snap flavor. mmmmmm

Sweet Potato Casserole II

This has now been my sweet potato casserole for 2 years now....HOWEVER.... It is WAY TOO SWEET. I suggest mashing the potatoes then adding the white sugar 1 Tablespoon at a time to the desired sweetness. I use about 3 Table spoons of white sugar, that's it. Any sweeter and it belongs in a pie crust and not in a casserole dish. I also cut the brown sugar in the topping in half.

Scottish Lace Cookies

This was a disaster for me. I made it with egg beaters and as they baked, the eggs just left the cookie! It looked like sweet fried eggs surrounding the piles of dry oats. Then, I added 1 cup of flour. My 4 year old enjoyed them

Banana Banana Bread

Liked it a lot. For those who need more sweet...I suggest a light buttering of the pan, then coat the pan with cinnamon and sugar mix. The ad more to the top proir to baking. Adds a little crunch and sweetness

Banana Sour Cream Bread

I found this to be a sweet, very moist cake-like bread. Other reviews felt the bread improved in flavor over night. No noticable change for us. The reason for the reviewers who enjoyed this whom did not like bananas, is because it has VERY LITTLE BANANA flavor. For us, Its all about the banana flavor. This MISSES the banana mark.

Tuna Noodle Casserole II

Based on others feedback, I used 1 Cup of regular milk. Then I added 1/2 Cup of frozen peas, used only 1 and 1/2 cup sharp cheddar cheese, then added lots of black pepper. Lastly, I used crushed saltines for the topping. A wonderful 1950's dining experience!

Apple Crisp II

Great. I made this with a frozen bag of mixed berries and no apples. I then cut the white sugar in half and omitted the cinnamon. Delicous and no apples to peel!

American Lasagna

To prevent this from becoming too watery, I layered ot with the dry lasanga noodles right out of the box. I have always made my lasagnas this way. Less work too.

Caramel Popcorn

I cut all of the ingredience in half and used 2 bags of mircowave popcorn, with rave revews. Also mixed it right in the foiled lined, pam sprayed pan to save on cleaning an extra bowl.

Awesome Slow Cooker Pot Roast

I have used this recipe for over a year made some improvements. Subsitute half of the water with cooking sherry! For a thicker gravy, use only one can of soup. I like to shread the meat and remove excess an hour or so before serving 30 minuted before serving, add a drained can of sliced carrots and a drained can of sliced potatoes. I also add a 1/2 cup of frozen peas. Serve with egg noodles and parmesan cheese.
