Indian-Style Rice with Cashews, Raisins and Turmeric

This recipe is very tasty. For a healthier version, I replaced the can of coconut milk and vegetable oil with coconut oil and Silk's 'True Coconut' milk. It was very tasty.

Banana Pancakes I

Delicious! I added a 3rd banana and balance it out to make it healthier by adding 1/4 cup of fiber flakes, 3 tbsp of ground flax seed and 3 tbsp wheat bran. They came out incredibly moist and was barely able taste the healthy additions from all the banana and still went well with it nonetheless. I also used non-bleached all-purpose flour. This has quickly become a breakfast staple in my home!! :)

Brazilian Fish Stew

Delicious recipe. I only used red and yello peppers and also threw in a couple of packs of frozen crab and it came out very tasty. This will definitely turn into a 'go-to' recipe. For those who are concerned about the amount of fat in the coconut milk, I made this once where I split the coconut milk in half and substituted the 2nd half with almond milk (very light fat free substitute) and it came out just as nice, not as sweet but still a great alternative for those watching their weights :P

Vegetarian Four Cheese Lasagna

I made this for a vegetarian friend who came over for dinner. I used yams instead of the pumpkin and absolutely LOVED this dish! I mixed the cubed yams with ricotta and it was great.

Easy Slow Cooker French Dip

Deliciously simple recipe but definitely needs seasonings added. I added 2 tbsp garlic power, 1 tsp of salt and pepper, 1 tbsp of Worcestershire sauce. Could only find a can of onion soup which worked very well along with a full tall can of guinness beer. Will definitely make a keeper!!

Chicken and Corn Chili

Very tasty quick chili. Best slow cooker chili I'm had ever!! I didn't have any salsa so I substituted it with a jar of bruschetta and it was still fantastic! Great served on a bed of steamed basmati rice. I also didn't have pinto beans so I used red kidney beans and it was still very good.

Caramel Bars

Fantastic rich caramel bars!!!! The quality of the caramel plays a huge role in the rich flavour! Made it twice for office functions and dinners at my house and it is a smash hit each time. Will definitely be putting this in my personal recipe vault!!

Carrot Chile and Cilantro Soup

Great soup with a real mexican flare. I loved this soup as did my roommates however it did not freeze well. After being frozen it appeared as though it had somehow curdled but it did not affect the taste in any way so it was still tasty.

Red Pepper Soup

Great starter soups for red peppers...can be used as a base to add to other things. I didn't use the cream and still found it to turn out creamy without it, good for those watching their weight!

Absolutely delicious. I had an extra celery stalk so I added that aswell. This recipe will definitely become a regular however I will cut down on the amt. of added flour.

Noodle Pudding

Came out really good. I had some leftover sweet korean noodles from dinner the previous night; they had their own light sweet flavour and with the cheese come of the recipe it came out really good! You can use this recipe as a base for anykind of sweet cheese noodle dish you desire to make.

Wonderful Almond Fingers

I followed this recipe to the tee and it turned out as such a disappointment. It didn't hold shape at all and were really mishapen. I was ashamed to serve them for dessert but they were tasty. I rated this a 2 only because it was still tasty regardless of how horrible they looked.

Really really yummy! I didn't have cornstarch so I used flour and it was still really good. (When substituting cornstarch with flour remember to use double the amt.of flour as you would with cornstarch)

Greek Souvlaki Dressing

Used balsamic vinegar instead of the required one and added 4tablespoons of lemon juice; turned out pretty good! Will definitely be going making this a regular dressing kept in the fridge.
