Delicious as written. Next time I'll leave the pieces larger as they're very fragile. Only took 11-12 minutes.

The Best Meatballs

I used 3/4 c water. 1/2 c may be enough. Also used only enough oil to cover bottom of pan. Very good! I gave it 4 stars, but everyone raved about them so I guess I should give them a 5 star rating!!! The meatballs are very soft and fall apart easily.

Chef John's Chicken Riggies

CHANGES; 1/4 lb sweet Italian sausage !/2 onion. 1/4 red pepper chopped and semi cooked in the microwave.. 4 boneless chicken thighs. 14 oz can diced tomatoes w/o much juice,( pureed tomatoes may have been better) 4-5 oz fresh mushrooms, 3/4 c marsala. 1/2 c. chicken broth mixed with 1 T tomato paste and 1 tsp cornstarch - warmed in microwave until thick 2 lg cloves crushed garlic, 1/2 C. kalamata olives This is a real play it by ear recipe in terms of when to add what, I like my chicken, mushrooms and peppers less cooked!!! Next time I won't use the cornstarch!!!! Add more tomato paste if necessary.

Baked Eggplant Parmesan

brown eggplant at least 8-9 min a side! Two small eggplants made enough for a 3/4 full large white casserole. Tom loved this!

Simple Time Pork Chops

I used fat free bleu cheese dressing in place of the butter and mayo. Also added a few panko bread crumbs to the cheese :) Broiled for a few minutes at the end. YUM YUM YUM

Chicken a la Mayo

I put fressh dill and a small amount of clives in the mayo and used lime juice, because that's what I had. Used crushed croutons. Baked at 385. EXCELLENT!!!!!!!!!!

Not Your Everyday Green Beans

I steamed the beans for a couple of minutes before adding to the pan, but I shouldn't have. It was still great, but the beans were overcooked. I added the onion as recommended and probably more mushrooms. It was EXCELLENT! I toasted the slivered almonds in a pan over very low heat. They were excellent too.
