Hot Cross Buns I

very yummy! I have a smaller bread machine, so I made 2/3 of the recipe, 8 rolls total. I added 5-spice and 1/2 cup of candied fruit, and changed the currants to raisins. Delicious, and perfect for Easter.

Eggnog Fudge

Turned out hard and crumbly. Should use a candy thermometer to cook to the correct stage. Boiling for 6 minutes was much too long.

Perogies

The flavour of these perogies was so much better than store-bought! But I had way way way too much potato filling - I got 17 perogies out of the batch, and used maybe 1/3 of the potato mixture. I'd cut the potatoes to 2 lbs, bacon to 1/3 lb, and the cheese to 1/2 cup next time.

Slow Cooker Cranberry Pork

Turned out well. Used 1 kg pork roast and 389 mL can of whole cranberry sauce. Pork did not taste like cranberries at all, but was very tender and moist. Sauce was very watery after cooking and had quite a bit of fat, so I made a separate gravy.

Raspberry Trifle

This is the best trifle I have ever had. I alternated raspberries and nectarines, and I also alternated custard and the whipped cream/cream cheese. Just heavenly!

Salsa Biscuit Chicken

This is delicious! I had about 1/3 of the chicken mixture left when I ran out of biscuits - maybe I didn't flatten them enough? If you make everything on a smaller scale, they would be great as appetizers.

Rocky Road Ice Cream

This was yummy! I added 1/4 cup mini chocolate chips, and for the cream used about 1/2 table cream and 1/2 low fat evaporated milk. I got rave reviews from my dinner guests.

I made this recipe with peaches - they were a bit underripe, so it wasn't very fruity. And I found the sweetened condensed milk flavour overpowering. Next time I'll try a vanilla recipe and add fruit.

Beignets

I did not enjoy this recipe. It was easy, if a bit time consuming, to make. I found the beignets were very bland. My husband liked them, though, so that's why I gave it 4 stars. Next year I'm going to Mardi Gras, so then I can try the original.

Pico de Gallo Chicken Quesadillas

Delicious! I made two quesadillas with this - put half the ingredients on each tortilla, then folded each in half, so they were much easier to flip. I used my grilling pan on the barbecue, and it worked great. Will definitely make again.

Melt In Your Mouth Toffee

This stuff is delicious!! I don't know why I waited so long to try the recipe. I used a jelly roll pan as recommended, and the thickness was just right. I had to put the pan in the fridge to chill so I could break it up easily. I skipped the chocolate chips, and used pecans for the nuts. I can't get over how good it is; you have to try it!! Eat it on it's own or sprinkle some over Butter Pecan ice cream. MMmmmmm...

This recipe is divine! So smooth and creamy. Toasting the pecans really enhances the flavour. I served it with a chunk of Melt in Your Mouth Toffee on top. I will be making this regularly!
