Lemongrass Coconut Rice

This is really good, but I had to add a significant amount of salt, and I added some fresh cilantro once the rice was finished cooking. Next time I'll add extra lemongrass.

Irish Potato Farls

These were delicious! I added a little onion powder to the dough mixture - this was a BIG help! I used bacon grease to fry the second batch instead of using flour - this was also quite tasty. They were good either way, really... thanks for sharing!

Irish Soda Farls

This was so simple and delicious - and I barely mussed up the kitchen! I did not knead the dough (kneading is a bit scary and I am not very good at it), so instead I just mixed a bit longer in the mixing bowl before transferring directly to my electric griddle pan (set at 300 F). I only used a pinch of salt - will add more next time. It is great served with salted butter and honey, or with blueberry preserves.

Peanut Butter Bars I

Instead of graham cracker crumbs, I used a wheat hors d'oeuvre cracker (what I had on hand). This gave the bars a nice hint of salt, which balanced out the sweetness of the other ingredients. My coworkers raved over these!

French Country Bread

This was my first time making a yeast bread, and it turned out great! I fretted over the amount of flour needed - I ended up needing at least 2 extra cups. I used all white flour as I had no wheat on hand, and it tastes great, just like bread from a nice restaurant. I brushed the tops with melted butter and sprinkled on some wheat germ for a nice pretty effect. Overall my first shot was pretty great! Thanks for the recipe!

Never Enough Green Bean Casserole

Yum! This was my first Thanksgiving as hostess, and this recipe definitely helped me through it! I put it together the nigt before (all but the fried onions) and kept it in the fridge to make things easier the day of the big meal. I used Kraft Old English Cheese for the processed cheese, made my own real bacon (instead of bacon bits), and used fresh baby portabella mushrooms (instead of canned). All of the leftovers are gone and I'm ready to make this again! This recipe will be a staple for years to come!

Caramel Cups

Delicious!! A hit at all of my holiday parties. I'll be careful next time not to fill the cups completely with the caramel mixture... leave some room for the frosting or else they'll leak all over the place!

This recipe was great, just like I remember from my favorite Middle Eastern restaurant! I forgot to get green onion at the store, but white onions worked just fine. I also added an extra 2 tablespoons of lemon juice to up the flavor factor.
