Best Brownies

Reviewed: Feb. 2, 2008
Good, but not the "best brownies". I only did one thing differently with the ingredients where I used dark cocoa instead of regular cocoa. With that said, the brownie itself is good. The frosting by itself is alright (even if I had used regular cocoa, it wouldn't have changed anything since I love dark), but you absolutely cannot spread it as is on the brownies. So I scattered the frosting in clumps around the brownie, put it back in the cooling oven, and three minutes later I took them out to spread it. Worked great. However, I'd say the frosting is TOO sweet (and I'm a powdered sugar lover) and do not need to be added to the top of the brownies. I would make these brownies over boxed, but I would omit the frosting and add some kind of chocolate chips or nuts to the mix instead. And perhaps a dusting of powdered sugar on top and a little vanilla ice cream on the side. The family ate them, but I think we'd rather indulge ourselves in some other kind of sweet dessert. However, should we have a craving for brownies, I will likely refer back to these until I find one we really like. :)

Restaurant-Style Buffalo Chicken Wings

Reviewed: Feb. 2, 2008
Perfect! We can finally say good-bye to expensive wings from other places and make them at home with the same great taste! I do one thing differently, which is baking them instead of frying them. Absolutely delicious! Thanks for the recipe!

Cheesy Baked Salmon

Reviewed: Jan. 23, 2008
Mmmmmm, good! My husband is not a fan of salmon, but he liked this and would like it more often, so that's saying a lot! Kids liked it, too! I did a few things different, but not much. I didn't have green onions on hand and I used Mexican shredded cheese on top (we always have that in the house, so it's what I use). Served with steamed califlower and diced baked red potatoes. Yummy, can't wait to have it again! Thanks for the great recipe!

Good Old Fashioned Pancakes

Reviewed: Jan. 15, 2008
I made these this morning and we all thought they were good, but not the best we've had. I followed all of Breeze's recommendations (room temp.[used microwave to achieve that], dry/wet, used a whisk) and that really made a huge difference, I think, in how well they did turn out. (And I'll do that with all future pancake recipes. Thanks, Breeze!) I added a bit more sugar and a little vanilla. They really did turn out really well, but we prefer our pancakes a bit more fluffy. I did enjoy the taste of the batter, though! Haha. Worth trying, that's for sure! :)

Easy and Delicious Chicken and Rice Casserole

Reviewed: Oct. 12, 2007
I can only give this four stars, because I changed the way I made it. I used the same ingredients, with a slight difference. I cooked everything on the stove top instead of in the oven (except the chicken), because all rice recipes I've made in the oven never turned out right (either overcooked or undercooked, could never find a happy medium). So I doubled the recipe and here's what I did. Put the chicken in the oven at 400 degrees. Boiled the water. Added a little salt and butter. Poured in the rice. Stirred in the onion mixes. Let the rice cook. When it was finished, I stirred in the cream of chicken soup, but instead of two of those (since I doubled), I used one and a cream of mushroom. Chicken was nearly done by this time, so when it was done, I sliced it up into chucks and added it to the rice mix. Then I sprinkled some shredded cheese over the top and served with veggies. Cooked that way, it turned out great! Will make it again like this. Thanks for the base recipe!

Doggy Meatloaf with Vegetables

Reviewed: Aug. 24, 2007
My dogs love this and lap it up in seconds! I do change a few things to their liking, but nothing important enough to mention. :) I always make this when I make meatloaf for my family (seperate recipes, obviously). I also freeze the leftovers and give it to them a week or so later. Thanks for the great recipe! My dogs thank you, too!

Perhaps I did it wrong, but our family felt this left much to be desired. Thanks anyhow!

Angel Chicken Pasta

Reviewed: Aug. 19, 2007
Our family LOVES this recipe! I definitely agree this is a dish I'd share with friends and family. I usually double the recipe, but instead of two cream of mushroom's, I use one and use a cream of chicken for the other. I also use a can of chicken stock instead of white wine. We serve with a side of steamed veggies. Simply divine!

This is a great base recipe as is, but would certainly be a five star recipe with delicious additions. :)

Firehouse Machaca Taco Filling

Reviewed: Aug. 19, 2007
This is simply divine! I make this in the crockpot. I leave out the water and lightly saute the onions/peppers before adding to the mix. Put in on high or low and you're good to go. I also add a red pepper and onion packet to the mix. I've also made this exactly 'as is' (except I still added the red pepper and onion mix) and it tastes the same as doing it in the crockpot. I've also used this in my tamales! You can make this in a variety of ways and it's still great! Two thumbs up! ** Edited** I am editing this from my original review from mid-August 2007, because I've made this several times since and have done it various ways. I've now decided that the best way and the only way I'll make it is this way. Put the meat in the crockpot and fill it with water. Slice up an onion and add the entire jar of green salsa. (That means I purchase two jars of green salsa, because the second jar I use later.) Cover and cook for 8 hours/low. A hour before I'm ready for dinner, I'll cut up and saute the peppers/onions. When that's finished or near the end, I'll drain the water out of the crockpot and shred the meat in the crockpot. Then I add the sauted peppers/onions, a jar of green salsa, I even add a bit of red salsa (it tastes good with a bit of it added), and the onion mix. That's how I'll make it from now on, because somehow it just tastes better this way. Delicious!

Clone of a Cinnabon

Reviewed: Aug. 17, 2007
Is there really anything to add to what's already been said? These are super delicious! These would have been gone within minutes if I didn't take half out after they cooled a few minutes, so I could freeze them for another time. What was left was gone almost instantly. These freeze great and I almost prefer them frozen and then heated in the microwave than fresh out of the oven. Don't know why, but they tasted better that way. I freeze them individually on wax paper in my freezer and once they are frozen, I put them in a freezer bag and pop them in the oven when someone wants one. I've also made these for family and friends and I always get asked for the recipe! Huge hit! Oh yes, I also don't make these with a bread machine, but by hand. Thanks so much for the excellent recipe!

Swiss Chicken Casserole I

Reviewed: Aug. 8, 2007
This was good, but not something I'd make over and over. I might make this again, but on a night I need a quick meal I can just stick in the oven and forget about it.

Exquisite Pizza Sauce

Reviewed: Jul. 31, 2007
Our family has a love/hate relationship with this recipe. I think it's a great base recipe, but we've tweaked the ingredients to suit our family's taste, so that's why I give it four stars. We didn't care for it 'as is', but I've made this many, many times and only recently found the right balance to suit my family's taste buds. I still use all the ingredients, I've just tweaked the amount of everything. I also make this in the morning and let it sit all day in the fridge to allow more time for the flavors to blend. We make this along with Jay's Signature Crust (delicious).

Simple Mexican Rice

Reviewed: Jul. 31, 2007
I don't know what I did wrong, but I followed the directions and my rice never cooked properly. I tried it on three different occassions to see if I had done something wrong and tweaked it a bit each time to help it, but I got the same results. I was hoping this would turn out, since it would help to cook it in the oven with what I usually make it with, but to no avail, I'll continue to make my mexican rice on the stovetop. Had great potential, but just didn't work out for me.

Mom's Squash Casserole

Reviewed: Jul. 31, 2007
This was good, but I think our family just prefers our squash to be lightly steamed with other veggies and served as is. Just a preference, because we love a similar recipe to this that uses chicken instead of the squash, but we serve our veggies on the side with it. It's still worthy of a four star, though, because it was good overall. :)
