Margie's Cuban Sofrito (Sauce)

I don't know about authentic Cuban dishes but I know this is a real keeper of a recipe. I made it just as written with the exception of not having any tomatoes so I left them out. The trick I think is to cook it for the full 30 minutes to blend the flavors. Meanwhile, I seasoned a pot roast with Everglades Seasoning and browned it in oil in a pressure cooker. Then I added two cups of liquid and cooked it 20 minutes. Both were done at the same time. I used the liquid from the pressure cooker to thin the sauce a little, added the cut up meat to the sauce and served it with black beans, yellow rice and cuban bread. YUM!

Sofrito-Style Grilled Pork Tenderloin with Plantain Salsa

Since there were no previous reviews on this recipe, I made it exactly as written. I was not sure I would like the salsa but I made it anyway. The whole dish was absolutely wonderful. The salsa was not too hot. The only thing I couldn't find was the squash and I did not substitute anything and it came out great anyway. Will make this again.

Delicious Ham and Potato Soup

This really was as good as everyone said it was. I had a few left over frozen vegetables and through them in at the end and they didn't hurt the recipe a bit. Will surely make this one again.

Garlic Butter

I was in a pinch for garlic bread for dinner. The only thing I had was some refrigerated rolls to bake. I made this butter for them and I'm not sure anyone could tell me what else was on the table. This is a keeper and soooo easy.

Peppermint Brittle

I just made this and it is not only easy, easy, easy, it tastes wonderful,wonderful. I used the red, white and green starlight mints and it made it even more colorful.

Ambrosia Fruit Salad

This was wonderful. I noticed a lot of the reviews thought the nutmeg and cinnamon was a little much but it just depends on your taste. If you are making it for the first time, I would suggest 1/2 tsp. of each and see how you like it. I used the full amount and no one had a problem with it. Experiment.

Corn Salad I

This was easy and quite good. I added a tablespoon of chopped chives just because I have so much and that added a little more color and zip. Next time I am going to try some fresh tarragon.

Apple Butter Spice Cake
