Easy Chicken and Corn Chowder

This soup is terrific! The nutmeg compliments the rest of the flavors nicely. Making the roux with the veggies is genius and helps make the chowder creamy. Changes I made (only because I'm trying to use up cans in my pantry) were using evaporated milk, and 1 can of salt-free corn and 1 can of creamed corn. I also added some hot pepper flakes for some heat. This recipe seems very adaptable and is very easy to make.

Best Toffee Ever - Super Easy

Tasty and very easy. Boil and stir until it reaches 300 degrees to make it more breakable.

Cocoa Rum Balls

These taste very strong of alcohol so if that is what you are going for it is perfect. I ended up making a new batch using half the rum called for as these were going on holiday cookie trays.I used raspberry rum which I had on hand. I also used used the food processor to finely crush the cookies and nuts (almonds). The new batch was delicious and perfect for gifts.

Sally's Spinach Mashed Potatoes

Love love love. Always looking for a new twist on favorite dishes. I did mix the cheese in rather than put it on top. I will add garlic next time. If using frozen spinach make sure you get as much water out as possible

Apple Crisp with Oat Topping

I tried this recipe because of how little sugar was mixed in with the apples. I was looking for a recipe that highlighted the apple taste without being too sweet. The apple part came out fine-used granny smith's. However the topping was way too sweet for our tastes although it did have a nice crunchy texture. I will try again but next time usimg less brown sugar in the topping.

Mushrooms Berkeley

A great change from everyday mushrooms and onions. The only change I made was to use 2 tbsp. of maple syrup instead of brown sugar with Merlot for the wine. I used the sauce to de-glaze the pan and added the mushroom mixture back into it after the sauce had reduced a bit. Served them over grilled pork chops.

Ultimate Cheese Ball

If I make this again I will definitely take the suggestion of another review to rinse the dried beef. As is this cheeseball is very salty. I did add the worcestershire sauce. The flavor combination is good though

Healthier Banana Banana Bread

Excellent banana bread recipe. The only thing I changed was to use non-fat vanilla yogurt because that was what I had. I started testing it after 50 minutes. It was perfect after 57 minutes in my oven. Very moist and tasty

Kristin's Fudgy Brownies

These were very tasty. I do have to say that 40 minutes in the oven seems way too long. I had my timer set for 30 minutes and the edges came out a little overdone. I did use a dark non-stick pan. Think that I will try a glass pan next time to see if that makes a difference.

Double Fudge Kahlua Brownies

These brownies were very tasty. The frosting definitely makes them. They are very cake-like rather than the fudgie type brownie I prefer. I started to check on these after 20 minutes and took them out after 23 minutes and they ended up a little dry.

Big Al's K.C. Bar-B-Q Sauce

First of all I can't believe I actually had all of the ingredients for this recipe. Secondly, it is outstanding. the longer it cooks the thicker it gets. I used on chicken and can see using it on just about any meat.

Cherry Tomato Corn Salad

This was really yummy. I used frozen fresh corn that I had frozen last fall. I also added a couple teaspoons of fresh lemon juice. I know the bottled is more convenient and less expensive but fresh is the way to go for lime and lemon juice.

Hash Brown Egg Bake

I made this for a breakfast at work. It was ok. I might try browning the potatoes first the next time. Also, if I was making this for just my family I would have added garlic and onions to give it more taste. My co-workers did like it.

Chocolate Meringue Pie

I ended up having to triple this recipe to fill the pie crust. I added extra egg whites because we like our meringue piled high. The pie tasted good and I will make this again. I gave it 3 stars only because I had made and poured the first batch before I realizes that I would need more filling.
