Jacky's Fruit and Yogurt Muffins

Great flavour, but not as moist as I was hoping they'd be, but that may be because I didn't use enough fresh fruit. I'll try more next time, and to leave them in the oven for slightly less time.

Oven-Fried Pork Chops

I made some of the modifications suggested by reviewers, leaving out the milk and doing a double coat of breading with flour (coat with flour, dip in egg then in bread crumbs, and repeat). I also added garlic powder and salt to the egg mixture. I really liked the way the breading turned out, though I found the pork chop itself was a little dry (though that may have been because my chops were sliced thin). Next time I'll reduce the cooking time slightly and see if I like it better!

Country Quiche

Quite delicious! I made a couple of modifications: used less bacon and onion, added some leftover rosemary ham deli slices, cut up into small pieces, as well as a handful of spinach, chopped (as much as I could add to the filling once I'd already poured everything into the pie dish). I also increased the amount of milk to about 2/3 cup. The quiche came out extremely flavourful and filling!

Cheddar Biscuit Cups

Made this recipe for the first time today, followed the instructions for substitution of self-rising flour, and like a couple reviewers, added 1/2 teaspoon of garlic powder and black pepper. Filled six mini-muffin cups. Came out very tasty, but not as moist as I was hoping. Perhaps I will add a little more milk/mayo next time.

Garden Pork Stir-Fry

I made this recipe with zucchini, mushroom and onion and thought it was alright, but that the sauce was a little too strong. I might try cutting down on the cornstarch next time, or adding a tablespoon of sugar as suggested by one reviewer. I did think the sauce tasted great with the clear flavour of the zucchini, but overpowered most of the other ingredients.

Chocolate Chip Muffins

I would have to agree with some of the reviewers here, and say that this muffin is just too bland for my tastes. The chocolate chips are the only real reason I would eat these muffins - even after I added an 1/8 cup of brown sugar, a 1/2 teaspoon of cinnamon and 1/2 tablespoon of vanilla, there was little flavour to the muffin base. I did follow the suggestions to top up the milk to 1 cup, so at least the muffins did turn out quite moist.

Beth's Peach-Nectarine Muffins

So I have to admit I don't follow this recipe as is. The biggest change I make is that instead of fresh fruit, I use a Del Monte fruit cup - the mango and peach kind - scooping out all the fruit and adding the syrup into the batter until it's got the right consistency. It probably makes the muffins much sweeter than with actual fruits, but I've got a sweet tooth, so I like them just fine. The other changes I make are to substitute 3/4 cup white sugar with half white, half brown, and to add a teaspoon of vanilla and cinnamon; and I skip the milk, using the syrup for the same purpose instead. Using the fruit cup really makes this recipe so convenient - I've made it four times in two months already! Plus I love that it uses vegetable oil instead of butter.

Curried Zucchini Soup

This turned out quite tasty! I substituted the curry with cumin and, like another member mentioned, added some garlic - I thought the consistency was just fine, but my zucchini were pretty large, so the extra vegetable could've helped give more substance to the soup.

Mini Meringues

These turned out quite lovely! I used 3/8 cup of white granulated sugar and an 1/8 cup of brown sugar for a little extra flavour, but cut down the vanilla to half a teaspoon. Baked for 20 minutes instead of 35, as per other reviewers' comments that they started to brown too soon. I also sprinkled crushed chocolate chips on top for fun. Meringues as just so easy to make and tasty!

Disappearing Marshmallow Brownies

These are absolutely delicious! I was a little worried when I made the batter, because it seemed so thick, and I was afraid that cutting down the butterscotch chips by 1/3 c had adversely affected it, but they turned out just fine. I actually found my marshmallows stayed identifiable, unlike what other reviewers mentioned, but didn't mind at all. The only thing I had problems with was that the batter didn't lie very flat, so they came out a bit lumpy and bumpy. But otherwise, this rich, sweet blondie that goes just perfect with a big glass of milk will disappear in no time in my residence.

Chocolate Chip Pancakes

I'm not a big pancake fan, but for chocolate chips I'll make the exception. My problem with this was that I found the batter was far too thick, and I had to add a great deal more milk before it was the consistency of pancake batter. But once I had them more liquid, they turned out quite nicely and tasted very good. The syrup was too heavy a butter flavour though, although the roommates liked it just fine.

Zucchini and Potato Bake

Very tasty! I didn't have any red pepper, but used half an onion (I halved the recipe because my casserole dish was on the small side). Added the flavouring spices to the breadcrumbs before tossing everything. I found that the veggies on the top of the dish were very crispy, but the ones on the bottom didn't get crispy at all, even after stirring halfway. Next time I may use a more shallow dish to get the zucchini and potatoes to be crispier.

Deluxe Chocolate Marshmallow Bars

These were absolutely delicious! I didn't have a beater on hand so I used a different brownie recipe for the base, cutting the requirements in half. My favourite part was definitely was topping - I was afraid it would be too peanut buttery, but it turned out deliciously! A perfect alternative to brownies and rice crispies!

All American Apple Pie

This pie was absolutely amazing! Nice, easy and fairly quick, it's perfect for me as a University student to make when I'm taking a break from studying. It turned out so delicious! I was a little worried about the look of the crumble on top, so I turned the oven onto broil for two minutes just to give it a nice browning. I also found that there was no way I could fit 6 apples into the pie, and only ended up using 3, but it was still wonderful. My roommates and floormates loved it too :)

Ooey-Gooey Cinnamon Buns

These are just amazing, and worth the time and effort. My boyfriend and I prep these before dinner, wait for the rising, pop in a movie, pausing to do some of the intermediate steps, and by the end of our movie they're ready to go and *so* delicious. My one complaint would be the messiness left on the cooking sheets - it's a hassle to clean all the sticky syrup. But other than this, these cinnamon buns are to die for!

Gelatin Spritz Cookies

I was looking for a good cookie recipe and remembered I had gelatin powder - this one worked out perfectly! I halfed everything in the recipe except the egg and the gelatin, used strawberry flavour and made 23 cookies. They were fast and easy to make (I didn't put them in the fridge because the texture was already fine for rolling), and when I brought them to a floor meeting in residence, they disappeared in minutes.

Lovely recipe, substituted 1/3 sugar with brown sugar, and added chopped pecans to the muffin mix, which was a better use of the pecans than placing one on top.
