French Toast Casserole

Reviewed: Nov. 16, 2010
So good and so easy to make! I love french toast but hate all the dipping and mess it makes. Problem solved!!

Tuscan Soup

Reviewed: Mar. 19, 2010
So good. I added 2 cans of potatoes since I didn't have any fresh ones on hand and used mild sausage because of the kids. Serve with salad and garlic bread. Only 4 stars because the kids complained of it being spicy (even with mild sausage). But the grown ups loved it. Delish!

Fast, easy and delicious! I baked it at 350 for 45 min and kept basting throughout. The whole family loved it!

Easy Slow Cooker French Dip

Reviewed: Mar. 17, 2009
Good, but not phenomenal. The flavor was a bit off. I think I'll add less beer next time.

Ham and Cheese Bowties

Reviewed: Mar. 17, 2009
The cheese was grainy, and it took too much time to make something that I could just get out of a box. Two stars because I like the idea of ham with mac n cheese.

Zucchini Risotto

Reviewed: Mar. 17, 2009
I must of done something wrong. My risotto was still hard on the inside and the flavor was bland!

Special Irish Beef Stew

Reviewed: Mar. 17, 2009
I used only half a can of tomato paste and only about two cups of carrots. I also added salt and pepper. Everyone said they liked it, but it did taste a little bitter. Will make again but probably with a little less beer. Very filling and even my finicky 7 yr old ate it.

Irresistible Irish Soda Bread

Reviewed: Mar. 17, 2009
I followed the directions exactly and it turned out perfect. I also added almost 1 full cup of currants and I had to cook it about 20 minutes longer that directed because I'm at a high altitude. We had this with coffee after dinner and we'll probably be having it for breakfast tomorrow too.

Chicken Tortellini Soup

Reviewed: Mar. 7, 2009
Quick, easy and surprisingly filling. I sauteed 3 cloves of garlic in olive oil and added it since I read a few reviews that it wasn't flavorful enough. Also a little less spinach and more fresh grated Parmesan on top. This was awesome!!

Linguine with Chicken and Sauteed Vegetables

Reviewed: Feb. 9, 2009
Amazing! I used chicken that I already had pre-cooked from the night before and heated it up in the pan with some soy sauce. I also added onions and omitted the cauliflower. Me and my husband went back for seconds and he's having it for lunch tomorrow. This is definitely one for the recipe box!

Puff Pastry Salmon

Reviewed: Jan. 25, 2009
My family loves salmon and spinach so I was really excited to make this after reading all the great reviews. The salmon didn't seem done enough, and while the pastry was nice and flaky on the outside it was slimy on the inside. The spinach was still raw and the pesto gave it a weird flavor.

Linguine with Clam Sauce

Reviewed: Feb. 28, 2008
I made this for the first time last night and not only was it delicious, but it was also easy. My picky 6 yr old, and my picky husband also loved it! I followed the recipe exactly - except I used 4 cloves of fresh garlic. I also grated fresh Parmesan over the pasta once it was served. French bread dipped in olive oil with garlic completed the dish. I had left overs for lunch today, and it was just as good the second time around. If I could give this more than 5 stars I would!

Hot Artichoke and Spinach Dip II

Reviewed: Sep. 23, 2007
Everyone loves loves loves when I make this - and it's so easy to make. Use low fat mayo and cream cheese. It tastes the same, but it's lower in fat!
