Alphabet Soup

I used 6 boullion cubes(otherwise the tomato flavor is overpowering), added a can of mixed vegetables at the end instead of frozen veggies, and 10oz pasta instead of 8. It was too spicy for my 5 year old's liking; Next time I'm going to try it with regular V-8, but I'm definitely making this again.

Easy French Dip Sandwiches

I made this exactly as the recipe directed, and my family loved them! Even my picky 5 yr old finished hers and wanted seconds. This was so easy to make and very delicious. :)This is going to be a regular at my house.

Easy White Chicken Chili

This came out really good, but as a harried mom of 3, I always look for shortcuts and doctor things accordingly for the picky eaters of my tribe. First, I used canned chicken (jackpot!), dried minced onion, and garlic powder, which easily took off 25 minutes of dethawing and chopping up chicken, chopping onion (kills my eyes every time), and dealing with mincing garlic. I added in carrots (also canned) and 1/4c flour for thickness. Kids loved it, wasn't up to my elbows in raw chicken juice and it took 20 minutes tops. Add sour cream and cheese on the top.

Creamy Chicken and Wild Rice Soup

This turned out great! I made a few tweaks, though: I used instant rice instead of wild. For the seasoning, a mix of paprika, parsley, seasoned salt, pepper and garlic. I also sauteed mushrooms, celery and carrots and added those (just add however many you like). This is the best recipe! Definitely a new family favorite!

Creamy Chicken Tortellini Soup

For one, I cut the spinach to about half. It was just too much. I also use more veggies- carrots, mushrooms, celery, onion (as much as you like) along with minced garlic. I cook all of those together in the chicken broth until tender, then mix into the soup. I have 3 kids ages 15, 12 &5 and they all love this recipe. With a little doctoring, I give it 5 stars.

Meatball and Pasta Soup

Everyone likes it, but I think I'm making a few changes next time. Add 4TBS tomato paste instead of 2, use half the onions in the soup, and simmer 40min instead of 30 since the veggies were still a bit crisp, and add a bay leaf to the pot. I used a pound each of the sausage and hamburger, doubled the rest of the ingredients, then used a third of it and put the other 2 portions in the freezer for easy meatballs in other dishes later.

Potato Casserole

This is an awesome, easy recipe. Some changes I made though, are: use half the corn flakes and add them the last 20 min of baking or they scorch, sautee mushrooms with the onions, and use 2 cans of soup. I've made this at least 3 times in the last month because my husband keeps requesting it.
