Baked Ziti IV

I thought this was good but not fantastic. I substituted ricotta for cottage cheese as suggested. I also needed this to be vegetarian so I substituted mushrooms and broccoli for the meat. Perhaps I was too skimpy on the cheese (I didn't measure precisely). In any case, it received good reviews from all the diners and made tons! I was skeptical that this would make enough for 12, but it did. Probably 8 large portions and 12 regular sized portions.

Maria's Stuffed Chicken Breasts

This is my new favorite chicken recipe! We left out the egg (didn't want it) and spinach (didn't have it). We added fresh basil, steamed broccoli (finely chopped) and sun-dried tomatoes. We also used our homemade marinara recipe. It was beyond fantastic! Definitely halve the filling as the others reviews suggested and enjoy!

Simple Spinach Lasagna

Fastest lasagna I've ever made! I used cooking spray instead of EVOO and egg substitute to make it slightly leaner. Big tip: subsitute an undrained can of diced tomatos for the water if you love tomatoes like I do!

Basic Truffles

I used 3/4 c. cream as dictated by the traditional truffle recipe. Instead of the vanilla, I used 3 Tablespoons (yes big T!) of Kahlua. Oh my gosh--so good! If you have trouble rolling, definitely leave in the refrigerator for another hour or so. It will make it much much easier. Once you coat with cocoa powder, let it sit for a few minutes. Then re-roll (the topping makes it less sticky) in order to make a good shape.

Awesome Broccoli Marinara

Pretty good way to jazz up broccoli! I added my own spices and herbs to diced canned tomatos. I think melted mozzarella is a must when serving this!

Death by Chocolate

I made lots of alterations. First, you can use any chocolate bar you feel in the mood for-I used a big Hershey's chocolate almond bar. I also used a pudding devil's food cake mix instead of the german chocolate. Lastly, I drizzled some hot fudge syrup on each layer also. A huge hit!

Award Winning Soft Chocolate Chip Cookies

Finally a cookie that will not flatten! It has a more shortbread taste to it than most chocolate chip cookies I make but very good! To the half-batch I made, I added 1 tsp. baking powder and 1/2 tsp. salt. I used splenda for the white sugar and regular brown sugar.

Definitely too much tomatoe sauce but I still made what it called for. I felt like this recipe was lacking the cheesy quality--I think increasing the cottage cheese might have helped.

I believe these are the make it yourself version of No Pudge brownies. I would rather the low fat boxed mix which is higher in fat calories but at least has taste!

Summer Squash Pizza Crust

I thought this had *awesome* flavor but not the flavor of pizza per se. I used yellow (summer) squash and only used parmsesan (not mozzarella) cheese. I messed up the flipping and it looked like scrambled eggs/a messy omelet. I would make this again. I'll reinforce that you need to take the crust out of your pan (cake pan, springform, casserole dish, etc.) before you top it. :)

To Die For Blueberry Muffins

This was a good bluberry cake but not really something I like to start my day with. But if you like sweet breakfasts, this is for you! Definitely cut the amount of topping way down--maybe to 1/4 the original amount!

Chicken Breasts Stuffed with Perfection

I suggest using prepared breadcrumbs. Since I don't like feta, I used mozzerella instead and used Italian seasoning in place of thyme. It was so incredibly yummy! It does take longer to bake than the recipe suggests but you don't need to freeze it for the full 30 minutes.

I halved the recipe (except the veggies) and added a can of tomato paste like the others suggested. I also added some dried basil and some Italian seasoning. I served with mozzerella cheese. I still feel like I was missing something, not sure what exactly...
