I'm a medical student trying to eat healthily and have fun cooking in a short amount of time! During less-stressful times, I love to cook for my family and friends as a stress-relief.
My favorite things to cook
Mexican food always seems to turn out well and be liked by all. I'm a big smoothie fan. My diet rotates between cereal, smoothies, salads, and sandwiches with more gourmet food squeezed in when I get the chance!
My favorite family cooking traditions
Molasses cookies at Christmas time. A double batch barely makes it to the next day!
My cooking triumphs
Catering a plated diplomatic dinner at the US Embassy. Although I must admit this was at my parents house, as they are diplomats. :)
My cooking tragedies
A squashy casserole that ended up so soupy because I didn't drain enough water out first. I tried to rectify with cornstarch and ended up with a huge mess!

Baked Ziti IV
I thought this was good but not fantastic. I substituted ricotta for cottage cheese as suggested. I also needed this to be vegetarian so I substituted mushrooms and broccoli for the meat. Perhaps I was too skimpy on the cheese (I didn't measure precisely). In any case, it received good reviews from all the diners and made tons! I was skeptical that this would make enough for 12, but it did. Probably 8 large portions and 12 regular sized portions.

Chicken Cordon Bleu II
I thought this recipe was great but my fiance didn't like it at all! Actually he liked the chicken but didn't care for the sauce. Oh well.

Maria's Stuffed Chicken Breasts
This is my new favorite chicken recipe! We left out the egg (didn't want it) and spinach (didn't have it). We added fresh basil, steamed broccoli (finely chopped) and sun-dried tomatoes. We also used our homemade marinara recipe. It was beyond fantastic! Definitely halve the filling as the others reviews suggested and enjoy!
