Light Chicken Piccata

I LOVE LOVE LOVE this. I've made it at least 20 times now. I do only use 1/4 cup lemon juice, and I love lemon...but 1/2 cup was to much. The yogurt marinade makes the chicken so moist. Don't skip it (but do wash it off before cooking!) And capers...I loves me some capers....

Poblano Chicken Enchilada Casserole

I thought this was a very intersting way to make enchiladas. I have never seen them made with the half & half style sauce. To cut fat in the recipe, I used fat free chicken broth and only 1/2 Tbsp butter to cook the chicken.I also used fat free half & half and sour cream. very tasty!

I thought this was great, but needed a little red wine vinegar. I added ~ 2 Tbsp. Will definitely make again!
