Awesome Sausage, Apple and Cranberry Stuffing

I have a problem of making too much when company comes, which turned out to be an amazing blessing as I had a bunch left over. Downside- I can't stop eating it;) I omitted the turkey liver as I used the neck/liver/other bits from the inside of turkey to line the roasting pan to make more flavorful gravy. I used about double the bread crumbs and glad I did- it still seemed a bit thin. But that could be because I'm used to a very bread centered stuffing. Fresh herbs are a pain but soooo worth it. Baked outside bird ahead of time @ 350F for 45 min foil on/ 15 min more foil off. Then just reheated it when turky came out of oven. Added an extra 3/4 cup of stock...key is if you use meat sausage or not as some moisture will come from here too. I will make this every chance I get! Beauty of it is that it could be a meal unto itself:)

Cranberry, Sausage and Apple Stuffing

I baked a traditional stuffing in the bird, and made this separate thinking only the adventurous would give it a try. The men in my family don't care for fruit in their meals. I couldn't believe when they all tried it and took more. The only change I made was hot italian sausage to give it edge.

Pumpkin Roll III

As a novice the unrolling was tricky. I used parchment paper once it came out of the oven. It worked very well. I can't believe how quickly it disappeared from the tabel...I will definitely me making this many, many times to come.

Amazing Ribs

I made 'Old Style BBQ Sauce' from this site. The sauce is fantastic. I let the sauce cook for 8 hours and then added the ribs uncooked on low for another 2hrs and then on high for the remaining time. I absolutely do not recommend cooking the raw ribs in the sauce. It turns out too liquidy and too fatty. The meat was tender and fanatastic, but we prefer our sauce a little thicker. Will definitely try again.

Lime Chicken Picante

It was very good, although be wary of the spice level of the salsa you use. We used hot, because we love hot, but mixed with the dijon and it made it too hot.

Italian Spaghetti Sauce with Meatballs

Absolutely easy (for meatballs) and was a huge hit at cottage dinner of 14ppl. I've made this many times, and my only suggestion is to not add the juice from the canned tomatoes right away, but only add as needed. Otherwise it turns out very soupy.

Stuffed Shells I

Aside from the actual shell stuffing (although using a ziplock bag made it easeier) this recipe was fantastic. I like more 'stuff' in my pasta dishes, so I added mushrooms, spinach, and sausage (un-cased, cooked, blended) to give it extra pop...and it was a huge hit. I might use extra sauce next time.

Atomic Canuck Chili

Everyone loved it but my father in law (too spicy). I had cut back a bit on the sugar, didn't use the hot sauce and cut back on the crushed peppers (2 tbsn). I could have gone hotter, but my husband doesn't like too hot (like dad). To make everyone happy we served with sour cream to temper the 'heat'. It was really awesome...we used Keith's for beer, but anything domestic is fine.

Easy Spaghetti with Tomato Sauce

Super easy. Very tasty and very easy to adapt to your likes...I cooked sausage in the sauce as it simmered. A time saver and it added moisture to the sauce.
