My cooking style is 100% plant based. My meals are healthy for the body and I use organic and local ingredients when possible. A plant based diet is better for our environment in so many ways. I love animals and try not to cause them any suffering and realized that wasn't going to happen while I was eating them. Another term for my eating and cooking style is vegan. Spiced Quinoa
I really like this dish and made it vegan with the substitution of vege broth. I've been experimenting with Indian seasonings this year and notice a difference in curry seasoning. Mine was spicy so I didn't add any extra. If you are new to quinoa it is very nutritious but be sure to rinse it well or it may taste dirty (IMHO). For me the raisins balance the curry with a sweetness that is needed. I'm glad I left them in. I'm serving this dish to a vegan friend tonight with Gardein chicken-like cutlets but the dish looks hearty enough to serve in bowls with pita bread.

Vegan Pancakes
These are the best Pancakes I've ever made from scratch. I'm lazy when it comes to measuring things but this is easy and if you follow this recipe EXACTLY they come out looking like those in the picture. I made sure I sifted completely & had my pan hot enough. I spread out the batter with the back of spoon to make them thinner but they are also fun thick and fluffy. I used "Florida Crystals" brand of "vegan" sugar. Make sure pan doesn't get too hot or you can burn these like any pancake. Next time I will follow other's advice and add some soy, rice or almond milk in place of the water. I'll also add some Cinnamon and a 1/2 tsp of vanilla. I may even throw some blueberries in them. Top them off with some Earth Balance (vegan) and some agave or maple syrup. I entertain often and wouldn't hesitate to serve these to any guest. I'm off to go freeze some extra ones. Enjoy!

Jamaican Burgers
Makes a lot. I cut this recipe in half and made 5 small or 4 large burgers. These tasted great but wanted to let viewers know that the texture is like a soft burger. You won't get the same feel as a boca burger. I'm vegan and served this with a thick slice of tomato, lettuce, vegenaise which is a cholesterol free mayo topping you can get at Whole Foods or Trader Joes or even Publix. Try to get a thick big whole wheat bun to serve with these.
