Meatball Nirvana

these are great!! I was looking for a basic recipe that didn't take forever or call for 'fancy' ingredients. The only change I made was to use less onion b/c my husband isn't a huge fan of onions. Oh I also used garlic powder instead of garlic salt b/c I didn't have any garlic salt. We ate them as meatball subs with store bought marinara sauce and tonight I'm making them again with store bought sauce for spaghetti and meatballs. Tasty, fairly quick, and delicious!!!

Pumpkin Dip

This dip is so yummy! I brought the cream cheese to room temperature and used a blender and didn't have a probelm with it being lumpy. I skipped the OJ but otherwise followed the recipe exactly. I served with apple slices, ginger snaps, and pretzels (for the sweet and salty effect). At first I didn't know how I felt about the pretzels but then I realized I couldn't stop dipping them so I guess it worked!

Roast Sticky Chicken-Rotisserie Style

Hot 'n' Spicy Buffalo Chicken Salad

Easy and delicious! I just used regular bleu cheese dressing instead of ranch mixed with fresh bleu cheese. I also used an "Italian dressing and recipe mix" packet for the seasoning. The first night we had this my husband and I made wraps with large tortillas, the chicken, ice berg lettuce, tomatoes, blue cheese, and buffalo sauce. The second night I made a salad with pretty much the same ingredients. This recipe is definitely one I'll try again and my husband loved it!

Yummy Blueberry Cobbler

This was really good and easy. I followed others' advice and halved the sugar (I also halved the entire recipe). I also used skim milk instead of whole milk. The batter wasn't runny like I expected so I added an extra TBS of butter and a dash more of skim milk. This recipe isn't quite as rich as some others; it has a lighter taste to it. If you're looking for a super rich and buttery cobbler this one isn't it. But this one is really good, easy and quick to make, and tastes great with vanilla ice-cream.

Banana Pudding IV

This was fantastic!! I followed some of the other suggestions such as only using 1/2 the can of condensed milk and using a couple of extra bananas. I also used 2 boxes of banana flavored pudding although next time I think I'll try one box of banana flavored and one box of vanilla flavored. In any case it was so GOOD and so EASY--a perfect combination!

Stromboli

This was great! Very easy...I eliminated most of the meats and just used spicy italian sausage and pepperoni. I also used the packets of crust (just add water) instead of the refrigerated one. Lastly, I pretty much eyeballed the ingredients rather than measuring everything out which also made it quicker. It was delicious-I'll definitelyl make it again!

Chicken Cordon Bleu II

This recipe is EXCELLENT! I've made it several times--it's so easy and it comes out great every time, even with minute variations. This last time I ran out of white wine so I used 1/2 sherry cooking wine and 1/2 white wine and it still tasted great. I made it for a dinner party and it was a huge hit- especially the sauce. I actually like when the cheese melts out into the sauce which didn't happen last time, but it was still great. I topped with freshly grated romano cheese and served with roasted asparagus and wild rice. mmmmmmm.

I love this recipe! It's easier than it looks and it comes out great every time. It's so good, that when I go out to Chinese restaurants, I compare my recipe to their's and I win every time! ;)
