Chocolate Chip Pudding Cookies

I love these. I've used the following combinations so far: French Vanilla pudding with dark chocolate and mint chips, pistachio pudding with choc chips and chopped dried cherries for spumoni cookies, and lemon pudding with choc chips (I would like to try those with cherries, too!) Every time, they come out delicious. I also add about 1/4 tsp of salt to bring out the flavors.

Extra Easy Pumpkin Cookies

These tasted EXACTLY like pumpkin pie! I subbed margarine for the applesauce, added 1/2 tsp ground ginger, ground cloves and nutmeg. Also, I used one less egg. The result were very smooth (albeit soft and slightly sticky) cookies that tasted amazing. Will definitely make again!

Apricot Cream Cheese Thumbprints

These were really good! I chilled the dough overnight. I dropped the balls of dough into confectioners sugar after rolling. To make the thumbprint part, I used the end of the handle of my plastic ice cream scoop, dipped in confectioners sugar. Used cherry preserves in place of apricot, and used lemon extract in place of the zest. Everyone loved them!

Applesauce Cookies II

LOVE these! I typically don't put nuts or raisins in my cookies, but omitting them (2c total!) from this recipe without substituting something else would really alter the end result. So, I ended up with 1c oats and 1/2c mini choc chips. I also upped the spices to 1tsp cinnamon and 1/2tsp ea of nutmeg and ground cloves. Excellent results. Will definitely make again! I ended up with 40 cookies.

Red Velvet Crinkle Cookies

These were fantastic! The only thing I changed was using lemon extract instead of the zest. I didn't measure it, just dribbled some into the bowl. Everyone loved them and they disappeared so quickly - I will definitely make these again.

Grandma's Lemon Meringue Pie

I need to try this again. My meringue came out perfectly. I added 1/4 tsp cream of tartar to the egg whites and sugar and used a metal bowl that I had sitting in the fridge overnight (along with my mixer's beaters.) I made sure to use the high speed setting on the mixer from the start (learned from a previous experience) and really was proud of how the meringue ended up. Buuuttt, then I managed to overcook the filling and there didn't seem to be as much of it to put into the pie shell as I should have had, though it still tasted pretty good. Lesson learned! Hopefully, everything will turn out nicely when I make this for my mom's birthday in October!

Vinegar Cookies

I made these one night after I used my last egg and accidentally burned the cookies from another recipe. These saved the night! I already had everything on hand and was able to whip them up quickly. I usually like soft and chewy cookies, but I really enjoyed the interesting crispy/crunchy texture these had. They spread quite a bit, but everyone at my game night gobbled them right up!

Oh, these are absolutely fantastic! Nobody could stop eating them. I put peanut butter chips in the chocolate cookie side. I even had a co-worker commission me to bake a batch for his family. Excellent, will make again!

Monster Cookies I

THESE ARE AMAZING! Everyone loved them so much! I used half the amount of chocolate chips and filled the remainder with butterscotch chips. First made them for a game night (I bake cookies for them every week) and then made them the following weekend for my nephew's Eagle Scout ceremony. They practically flew off the plate (:

Pumpkin Cookies I

Made these using chocolate chips (only 1 cup) and they were fabulous! I didn't have a sifter, but they turned out really nice. I imagine had I sifted the dry ingredients, they would've ended up being more cake-like. Everyone loved them and they disappeared very quickly (:

Orange Meringue Pie

This was SOOOOO good! Was worried about the filling as it wasn't thickening up like it was supposed to - took a look away from it to get my margarine cut up and when I turned back to the pot, it was ready! Patience is a virtue. Also, this is the first time I have made meringue. I had my metal bowl and my beaters for my mixer in the fridge overnight to ensure they were cold in time to make the meringue part. It took a long time to get the stiff peaks to form, and even then, I think maybe I should have beaten them even longer. Next time, I will keep the mixer on high speed the whole time since I think the problem might have been that I didn't incorporate enough air into the egg whites fast enough. I can't wait to make this again, though!

Easy Lemon Cookies

These were fantastic! I made them for my friends at game night and these disappeared so quickly - everyone loved them! I had chilled the dough overnight and baked them the next evening. After I took both pans out of the oven (I ended up with 24 cookies,) somehow, they continued to spread out and became flatter than I had anticipated. But they were still nice and soft and tasted great!

Annemarie's Lemon Bars

I really liked these a lot! The shortbread base is amazing. I will be making these again for my family reunion this weekend and plan on making the lemon layer using 1.5x of the given ingredients and will add some lemon zest for extra lemon flavor. Edit: I made these again and used 1.5x of the ingredients for just the filling portion. I used both the zest and the juice of two lemons (the juice was over 1/3 cup.) These turned out WONDERFULLY! If you love lemon like my family and I do, then this is definitely the way to go!

Red Velvet Brownies with Cream Cheese Frosting

These were good and everyone seemed to like them. However, I think perhaps they might be missing something. I haven't quite figured out what that might be yet, but I am working on it. They seemed a touch dry also, but I would really like to experiment a bit and try to make them again.

Cake Mix Cookies IV

These were great! So simple and so quick, not to mention delicious! I used Funfetti cake mix but only 1/3 cup vegetable oil. I also added standard rainbow sprinkles and also rainbow star-shaped sprinkles. They disappeared very quickly. Will definitely make these again!
