Syracuse Salt Potatoes

I have been eating these treats for about 40 years, and I have to agree with "Naples34102". They can be bland. And what I do to prevent this, is add the potatoes and the salt at the same time, while the water is at a full boil. The rest of the recipe is the same. Be sure to have plenty of melted butter on hand. Those of you who live in upstate NY should relish this treat...you can't get in any where else, unles you do it yourself. And there are no kits outside of that area. I'm giving this recilpe 4 stars, only because I think adding the salt with the potatoes makes them salter, and more deserving of 5. Oh, and I prefer sea salt, or kosher salt over the "fine" salt called for. Just my preferance.

Easier Chicken Marsala

This was just ok for me. Flavor was nice, but not great. I followed the recipe exactlly, but it did not make enough sauce for 4 servings. Also, the sauce was very thin, and I was expecting a slightly thicker sauce. Doubt if I will be doing this one again.

Microwave Clam Chowder

Like the other reviewers, I could not see how a chowder made in the microwave could be all that good. Also like the other rreviewers, I love it. I used 2% milk, because that's what we use, and it was still excellent. Maybe not as thick as whole milk would have made it, but very nice. Also, I think next time I will use 1 can of chopped clams, and 1 of minched. Just to see how that works out. Thanks Mary Jane. It was GREAT!!

Cousin Cosmo's Greek Chicken

This was tasty, but like many other reviewers, I felt the sauce never thickend up. It would have been much better if it had. Also, I felt that simmering the spinach and tomatoes for 10 minutes was longer then needed. Perhaps 5 minutes would have been enough. However, the taste, as long as you like feta cheese, was very good. I may or may not try this again. Not sure yet. Oh, one other thing. The recipe calls for 1 tbl of flour, divided. In step one, it say's " combine 1 tbl spoon flour with....". Then in step 3, it says, 'whisk together 1 1/2 cups water.....and remaining flour." What remaining flour?? I already used the 1 tbl spoon called for. I added another to the mix, but it still never thickend up.

Pasta with Fresh Tomatoes and Corn

This was somewhat of a disappointment to me. After chopping up 2 tomatoes, of the 4 the recipe called for, I felt that was more then enough. And it was. Although there were a lot of flavors in this dish, the amount of tomatoes, even with just 2, was somewhat over powering. All in all, not a bad dish, but not, in my opion, worthy of more then 3 stars. Thanks anyway.

Hamburger Steak with Onions and Gravy

When I was making this, I thought that I should only make 2 patties, as it was only for the two of us. Instead, I made 4, then realised it called for 8. 8 patties out of 1# of burger is not a burger STREAK, it's a MickyD 15cent burger. Even with only 4, the meat was a little dry. The onions and gravy were favorful, otherwise it would have been 2 stars. I might make this again, but if I do, I will only make 2 STEAKS.

Pasta with Broccoli and Bacon

Jalapeno-Blue Cheese Burgers

Woderful....very flavorful, and easy to make. Not sure what the Swiss cheese is suppose to do, really can't even taste it, but I loved this one. I only made half the receipe, and made 3 burgers. Cooked 2 and can't wait to defrost the 3rd for an awsome lunch.

Pasta Primavera with Italian Turkey Sausage

This was pretty good.....full of flavor and fairly east to make. I did not have any turkey sausage, so I use sweet italian, and it worked out beautifully. I reduced the entire recipe to serve 4, and it can't wait to have the left overs. A keeper that will be done again.

Meat Loaf Pie

This is okay, but just that, okay. Not bad, but not great either. Not sure what would be needed to make it great, but I do not believe I will be doing this anytime soon. On the upside, it was quick and easy to make, just the lack of flavor makes it just okay.

Barlow's Blackened Catfish

This is one spicy dish, but we love spicy food, so that was fine. Well, at least I love it, and Jeanne puts up with it. First, I think for one pound of fish, you could cut the spices in half, one teaspoon of each should be plenty. I use two, and had a lot left over, and I really coated the fish. Second, as someone else mentioned, watch out for the fumes when frying. Open the windows, and turn on the exhust fan, you are going to need it. The secret to this recipe is of course the Italian dressing. It seems to take away some of the heat, but still leaves a nice bite and great flavor. I will be doing this one again, perhaps with a differant fish next time.

Dip For The Stars

I made this for my wifes book club. I never had a taste, so I really don't know how good it turned out, but based on the results, I'm giving it a 5. Everyone in the club wanted the recipe, and even asked me if I'd cater thier next event. But of course I will.. Next time, I'll get mine first.

Easy Olive Martini Chicken

This was one of the best I have done in a while, and I've done lots. I was surprised at the flavor, not at all like a martini, but the gin and vermouth did wonders to the olives, and that was the flavor that came through. As normal, I only used 2 breast, but the full sauce. Perfect!

Easy Shake and Bake Chicken

Very quick and easy. Normally, I follow the recipe to the letter, the first time I do it, but so many other suggested adding garlic powder that I could not over look that. I also added a little onion powder as well. Everything else was according to the recipe. This was very moist, tasty, and best of all, easy to do. Thanks Candy

Garlic Cheddar Chicken

This was great....another winner to add to my growing collection. Made is just the way it's written, except cut in half, and only used 2 breast. As I boned and skinned them myself, by the time I pounded them out, the 2 of them filled my 9X13 baking dish. This is a keeper, and will do when company visit. Will also experiment with other types of cheese. Oh yea, I forgot the garlic,(duh), but it was still awesome.

Clams Italiano

I'm giving this recipe 4 stars for several reasons. I cooked it as directed, except for the amount of clams, and felt several things were out of sink. First, 2 cups of wine is more then needed, 1 cup would be plenty. Secondy, I would increase the amount of red pepper flakes to 2 teaspoons, for a little extra kick. With that said, I thought this was real good as is, but could have been better. What really blew my mind was the amount of clams it called for....."36 small clams in shell"....to serve 6. Are you serious?? I cooked up 5# of small calms, about 150-200 clams, and had enough sauce left over for 100 more. Who eats just 6 clams? Anyway....I'm sure I will make this again, with the changes I mentioned.
