Lentils and Rice with Fried Onions (Mujadarrah)

Disclaimer - I modified the recipe quite a bit. I didn't mean to, but I realized I didn't have lentils after I started cooking. So I added chickpeas (a legume in place of the lentils) and green peas (for color and nutrients) to the rice. I also added garam masala to the rice as others have suggested. I used plain greek yogurt. YUM! The fried onions and yogurt are what make this dish. What a great, basic, easily modifiable recipe. I'm sure I'll try it as written some day, but as it is, I will always want my rice with yogurt and fried onions now.

Colleen's Slow Cooker Jambalaya

This was amazing. I made it just as listed, however I didn't have cajun seasoning, so I made my own using pepper, cayenne, paprika, oregano and salt. Also, about an hour before serving, I threw in a cup of uncooked white rice. I had my crockpot on high. I think this helped with the excess moisture that others had mentioned. It was fantastic! Rave reviews all around!

Mushroom Lentil Barley Stew

5 stars for ease of preparation and simple ingredients. I love that this can be made using only one fresh ingredient. I also like that this can be used as a base recipe. I didn't have savory, so I doubled the basil. Added some white wine and rosemary and left out the bay leaves. That said, it was a little bland, but I think more seasoning and some Parmesan on top could make a big difference. I imagine I'll make it again with a few tweaks.

Black Beans and Rice

4 stars as written, it's really a great base recipe. As is, it's a little bland. I added a can of corn, a can of diced green chiles, hot sauce, and extra spices that I had in my cabinet. I bet adding tomatoes and cheese would be good as well.

Sarah's Applesauce

Taste like the filling of an apple pie! I used 4 medium size Gala apples, peels kept on, and put all the ingredients in a crock pot for about 3 hours. Could have used a little less water, but that could have been due to the size of the apples or the use of the crock pot. I just used a slotted spoon to drain most of the leftover water.

Stuffed Green Peppers I

Great! I made some modifications after realizing I didn't have the right ingredients, but I'm sure the recipe would have been just as good as written. I used ground turkey instead of beef, added minced garlic, omitted the onion, added canned mushrooms, and used a bit of marinara instead of tomato sauce in the meat mixture. They were delicious! And this coming from a person who hated stuffed peppers growing up!

Delicious Ham and Potato Soup

This was so good! Here's what I did...I used leftover Easter ham, red potatoes (that I was too lazy to peel), beef buillion instead of chicken flavored, and I added a couple of chopped baby carrots (leftover from Easter as well) and a can of corn. I'm sure the recipe would have been just as good without the carrots and corn, but I always try to sneak veggies in where I can. In any case, the soup was awesome, but the best thing about this whole recipe is how quick and easy it is! Don't peel the potatoes and warm the milk in the microwave (:45) before adding it to the butter/flour mixture, and you'll be done in no time!

Sauceless Garden Lasagna

YUM! I'm eating this leftover at lunch as I type! I used whole wheat noodles and halfed the recipe. It smells (and tastes) soooo good!

Penne with Spicy Vodka Tomato Cream Sauce

This is the best vodka pasta I've had! The spicy sausage is what really adds the extra flavor. I recommend adding an entire pound for a heartier pasta.
