Lentils and Rice with Fried Onions (Mujadarrah)
Disclaimer - I modified the recipe quite a bit. I didn't mean to, but I realized I didn't have lentils after I started cooking. So I added chickpeas (a legume in place of the lentils) and green peas (for color and nutrients) to the rice. I also added garam masala to the rice as others have suggested. I used plain greek yogurt. YUM! The fried onions and yogurt are what make this dish. What a great, basic, easily modifiable recipe. I'm sure I'll try it as written some day, but as it is, I will always want my rice with yogurt and fried onions now.

Colleen's Slow Cooker Jambalaya
This was amazing. I made it just as listed, however I didn't have cajun seasoning, so I made my own using pepper, cayenne, paprika, oregano and salt. Also, about an hour before serving, I threw in a cup of uncooked white rice. I had my crockpot on high. I think this helped with the excess moisture that others had mentioned. It was fantastic! Rave reviews all around!

Mushroom Lentil Barley Stew
5 stars for ease of preparation and simple ingredients. I love that this can be made using only one fresh ingredient. I also like that this can be used as a base recipe. I didn't have savory, so I doubled the basil. Added some white wine and rosemary and left out the bay leaves. That said, it was a little bland, but I think more seasoning and some Parmesan on top could make a big difference. I imagine I'll make it again with a few tweaks.
