Baked Teriyaki Chicken

Reviewed: Apr. 17, 2008
I thought the flavor of this chicken was really tasty. I took some suggestions from other reviewers by greasing the pan with sesame oil, doubling the sauce, using half white and half brown sugar and adding 1/2 teaspoon of cinnamon to the doubled sauce. I also covered the baking pan for the first 30 minutes of cooking. Yes, the pan was a mess and took some scrubbing, but I avoid having aluminum leach into the food I serve my kids whenever possible - as it is a known neurotoxin. The chicken thighs came out juicy and delicious - and I reserved some of the sauce to drizzle over the rice I made with it. Will definitely be making this again.

Dad's Steak Rub

Reviewed: Apr. 12, 2008
Excellent. However, I reduced the pepper to 1/2 tablespoon and thought it was enough for our tastes. Used "Old Bay" as the seasoned salt. Loved the hint of maple and not having to marinate the steaks before grilling them. Will definitely be using this recipe again!

Crunchy Tossed Salad

Reviewed: Apr. 12, 2008
I've been making this salad for years when I want something special and different. My family loves it - even those who are not big salad eaters. Kids gobble it up because it doesn't have any "icky" veggies in it! The crunchy toppings mixed with the sweet dressing is super yummy.

Savory Garlic Marinated Steaks

Reviewed: Apr. 11, 2008
Fantastic. We marinated our rib-eye steaks overnight and they came out wonderfully. Definitely a taste of garlic and quite rich. A little tang, too! Very good, will be using again and again.

Turkey Bow Tie Skillet

Reviewed: Apr. 10, 2008
This made for a decent meal. I had some ground turkey and needed something to do with it - and this fit the bill. However, I don't know that I would go out of my way to make it again. It was surprisingly time consuming - and a little on the bland side.

Green Banana Fries

Reviewed: Apr. 8, 2008
Yummy! We loved these fries - especially the kids. I fried them in peanut oil and sprinkled with salt. Then, served them with Ranch dressing for dipping. Very different and a nice change of pace from potato fries.

Green Beans with Cherry Tomatoes

Reviewed: Apr. 8, 2008
My family and I enjoyed this recipe very much. I cooked the tomatoes a little too long - as the skins were starting to peel off. So, I'll watch that next time. But the flavor of this dish was fabulous. It's one I'll make again and again when I have fresh green beans on hand.

Easiest Slow Cooker French Dip

Reviewed: Apr. 8, 2008
I thought that the roast turned out wonderfully. Delicious flavor and very tender. But using the au jus from the slow cooker - I did not care for at all. It was much thicker than I am accustomed to. And, was full of the grease from the roast. Yuck. I think it would have been much better if I had made a separate broth for dipping the sandwiches.

Honey Mustard Sauce

Reviewed: Apr. 8, 2008
Very simple and delicious. Versatile, too - as you can make it with either Dijon-style or yellow mustard, depending on what you are in the mood for. Great for using as a dip, salad dressing or marinade. Definitely a keeper!

Oriental Pork Cabbage Stir-Fry

Reviewed: Mar. 31, 2008
I found this recipe to be just alright. Nothing particularly spectacular about it. I did enjoy the taste of the freshly minced ginger. It made for a satisfying weekday meal, but not something worth repeating.

Runzas (meat pies)

Reviewed: Mar. 26, 2008
This is the best Runza recipe on allrecipes.com for sure. My husband and I are also transplants from Omaha and miss the Runza Hut in a big way! We always liked just the classic Runza - not the more fancy versions. And, this fits the bill! I will mention a few things that I did to replicate the Runza Hut's creation more closely. I beat the eggs slightly before adding them to the flour mixture. I found that 3/4 cup of meat mixture was a better amount for each Runza without leaving too much excess. And, after rolling the Runzas into rectangles (instead of triangles) - I covered them and let them rise again in a warm place for one hour. I thought the texture was better/fluffier this way. Other than that, I left the recipe the same. They were wonderful and my whole family enjoyed the reminiscent treat.

Refried Beans Without the Refry

Reviewed: Mar. 26, 2008
I thought these were great - but I will reduce the amount of salt next time. Makes a HUGE batch. Much better than canned. A real treat for my family!

Tangy Cauliflower Salad

Reviewed: Mar. 26, 2008
I found this recipe to be very bland. A weak honey mustard sauce over cauliflower and grapes. The walnuts were a nice touch. But, I would have preferred serving the cauliflower and grapes with ranch or a better honey mustard sauce to dip in.

Chili-Lime Chicken Kabobs

Reviewed: Mar. 26, 2008
These were good - but I would have preferred a more intense flavor. Perhaps a chili-lime baste during cooking would have achieved this. As is, the flavor was really quite mild and lacked the "tang" I was looking forward to.

Chili Rellenos Casserole

Reviewed: Mar. 26, 2008
I really didn't care for this at all - but my husband loved it and wants to have it again! That won't be happening with me as the cook - but I guess I'll just give it a neutral rating. I did not like the taste of the canned chile peppers at all. And, it seemed real "eggy" like a Mexican fritata or quiche. Just not what I expected a "Chile Rellenos Casserole" to consist of. I will keep searching for a more traditional recipe for Chile Rellenos. Something more like what you would be served at a Mexican restaurant.

Macaroni and Cheese Salad

Reviewed: Mar. 26, 2008
This was pretty good. But, I added a tablespoon of sugar to the mayonnaise and thought it was much better. I would recommend it - either that or using a salad dressing like Miracle Whip instead. I especially liked the cherry tomatoes in this recipe. Yum!

Slow Cooker Chicken Stroganoff

Reviewed: Mar. 13, 2008
This recipe was just alright for me. My husband liked it more than I did. I certainly appreciated how easy it was - and it made the house smell yummy. It was quick to put together over egg noodles on a busy weeknight. But, I found it to be a bit too salty for my taste. Overall, I think I'd rather stick to making traditional Stroganoff

Three Bean Salad I

Reviewed: Feb. 25, 2008
I made this twice - once as written and once with changes that I thought were necessary to make it much better. I reduced the sugar to 1/4 cup, reduced the oil to 1/3 cup and used olive oil instead of vegetable oil, added 1 cup of chopped celery, added 1 teaspoon of salt and added 1/2 teaspoon of black pepper. The rest I left the same. It came out less sweet and less oily than as written.

Whit's Chicken Enchiladas

Reviewed: Feb. 25, 2008
This was not my cup of tea. I followed the recipe as written - and in the end thought it was just OK. Kind of boring. Not super tasty. Really...white. No color. I have tried several other chicken enchilada recipes from this site that my family and I like much better.

Pork Meatballs

Reviewed: Feb. 22, 2008
These were decent. I don't think they were exciting enough for me to make again, though. I had to triple the recipe for my family - and ended up dropping the meatballs into a big pot of boiling broth... much like dumplings. I got this recipe out of my 'Reminisce Extra' magazine (sister publication to Taste of Home) and made the "Hot German Noodle Salad" that was featured with it. I wasn't crazy about it, either. Edible, satisfying dishes - but not keepers.
