About this Cook
I try to make everything easier for myself while cooking since I only have a small amount of energy (thanks to having MS). I will cook anything, not picky at all... I will try anything food wise, but will not continue to eat it if I do not like it, but the important thing is trying new items that you normally would not (keeps life interesting)I LOVE LOVE LOVE spicy food! I have done a wonderful job of fattening up my husband since he came home from Iraq, now he actually looks like a healthy man and not a starving boy!
My favorite things to cook
Like I said I cook everything, I love to make stuffed shells though... I have to have my husband help me stuff them no a days because my hands don't work so well anymore (once again thank you MS) but he is more then happy to do so...
My favorite family cooking traditions
pot luck on Christmas Eve with family, baking christmas cookies on christmas eve day... really puts you in the mood for the holidays

yup don't like to toot my own horn so I will keep them to myself...
My cooking tragedies
Yeah "non stick" pots tend to flake if you use a metal whisk to make gravy!! That is the only thing that I can really think of at the moment

Spicy Bean Salsa
completly addictive! I may add a bit more garlic and more jalapeno peppers next time though, or add it when I get home from work today... even my husband who HATES the texture of beans likes this..

Carrot Cake III
WONDERFUL! I think next time I will use less powderd sugar in the frosting as we thought it was a bit too sweet.. I will leave the pecans out of the frosting also, was a pain in the butt to spread it around... I may try it with rasins next time also.. but overall it was awesome just the way it was

Pizza Dough I
very very good! this is the only recipe that we use for dough... I have even made it healthier by doing 1 1/2 cup white flour and 1 1/2 cup whole wheat pastry flour. I add in some seasoning to the dough just for some added flavor and use olive oil instead of vegetable oil. We also prebake the crust for 10 mins to keep it from getting soggy
