Coconut Macaroon Brownies

I only used the coconut filling from this recipe, so I don't feel that I can give it 5 stars as I didn't use the whole recipe. I used the "fudge brownies 1" recipe for the brownie. I read the reviews that mentioned a cake like brownie and I don't like those at all. The brownie I used is fudgey, but that might be a problem too. The coconut filling was great but because it was so thick and heavy, I couldn't keep it separate from the bottom layer. After making a mess I decided to just mix it with the bottom layer and keep the top layer clean. It turned out great! I will definitely use this filling again but be more careful about bake times. It adds a lot of moisture but is totally worth it. It tastes just like a german chocolate cake really easy and far better than you get at the store.

Fudge Brownies I

These Brownies are amazing! I love a fudgy brownie and these definitely are. Unfortunately I read too many reviews about them being dry or too cake and people using 6 oz chocolate. I used the normal 4 of unsweetened baker's chocolate but then had just 1 oz of semi-sweet so I added that. I think this added too much liquid into the batter because no matter how long I cook them, the brownies are still gooey. So I'm really hoping they firm up a bit over night so I can take them into the office. Luckily for me (and unluckily for my pants) I really like gooey brownies that taste like fudge. I would say these are hands down the best brownies I have ever made, and don't change the recipe. It doesn't need any alterations at all. It is a very rich brownie though.

Cowboy Skillet Casserole

I really like this recipe and wish you could rate it 4.5 stars because I did have to change a good few things about it. I had to transfer everything from the skillet to a casserole dish because I don't have an oven proof skillet. The first time I made I found that I needed 2 boxes of Jiffy rather than just one to cover all the material. I found that while it tasted great there wasn't enough sauce and it got a bit dry so I had to keep adding bbq sauce to it while eating. This time I used 2 cans of beans and even added a little extra bbq sauce to the mix. I also added a few spices to taste (cumin, garlic powder, chili powder). When I layered everything in the casserole pan I put a shredded mexican cheese mix on top of the meaty stuff and even mixed some into the cornbread mix and on top of the cornbread. I really like cheese so it was a natural addition for me. This time I have a much better ratio of meat mix to cornbread and plenty of sauce! It's awesome!

Hot German Potato Salad III

This has become my signature potluck dish! I make it all the time and everyone loves it. I hate mayonnaise and fell in love with the german potato salad while living in Germany, this is the closest recipe I've ever found to it. I've made a few changes though. I tend to use red potatoes rather than russets. I also tend to use apple cider vinegar rather than white vinegar. The white vinegar is fine, but the apple cider vinegar just adds a little tang, especially as I use applewood smoked bacon. I love vinegar and found the original recipe a little light on it. When I make it for myself I swap the water and vinegar ratios. I find that is a bit stronger than most people like though so when I am taking it out I use 1/2 cup vinegar and 1/2 water. This isn't quite the same amount they say to use but it's close enough. Also I never have celery seed, so I've never added it in. Be careful with the flour mixture as it can bind up really fast if you aren't careful and make the texture odd but the flavor is still great.

Mushroom Lentil Barley Stew

This recipe was easy enough to make, and smelled good. When I tasted it I found it rather bland so I added Worcestershire sauce and paprika. I also had to add a good bit more broth as it all absorbed. I did the 10 hour low heat setting on my crock pot, as that seemed like a good idea at the time. It was fine hot, very hearty and filling though still a little bland. I like to use my crockpot on weekends to make dinner on Sunday and eat the leftovers for lunch the rest of the week. Unfortunately I didn't realize that this became unappetizing gelatinous once it cooled down. I tried eating it but the texture was gluey. So to summarize it was good, if bland while hot but make sure you are going to eat it all that night as it doesn't store well.
