Hearty Vegetable Lasagna
This was pretty good, and I"ll make it again with a few changes. First I took other reviewers advice and added zucchini and squash. I think both was a little too much, just one or the other would be good. Also I would halve the mushrooms because my pasta sauce already had some veggies in them. Between the mushrooms, the zucchini and the squash there was a little too much water added to this recipe. That is certainly my mistake. I think I might sauté them for a bit longer next time, until the onions are nicely caramelized before adding them to the sauce. Overall it was a good recipe, and the issues I had were due to some changes I made not the original recipe.

Slow Cooker Enchiladas
This recipe was quite good but I would not call it enchiladas. I definitely made a few changes to adjust for my tastes. I made the ground beef like the directions on the taco seasoning, so it was a lot less watery. Then i added a can of black beans to the meat to add a bit more nutrition. For the cheese mixture I used some queso fresco and shredded mexican cheese. That was just because i really like queso fresco. I also used a bit too much salasa. Finally I added some pickled onions and black olives I had on hand. I personally like the tang they add to a mexican dish. I recommend double layering your tortillas if you really want to taste them. I think you could easily also make this in the oven with a caserole dish. I think you could also add some nice corn and other veggies to it too.

Pumpkin Spice Cupcakes
This was a hit at a halloween bonfire. I will absolutely make them again. I love pumpkin and am always looking for new recipes to make with it. I did make a few changes however. I really like a stronger pumpkin flavor so I put about 3/4 of a can of pumpkin in and gave the rest to my puppy. I also doubled the cinnamon and nutmeg and added a smidgen more of the other spices. The cupcakes came out super moist and had great flavor. Everyone loved them. The frosting was simple to make and I followed the recipe exactly. I bought enough cream cheese to double the recipe after reading other people's review, but a single batch was plenty to generously frost all the cupcakes. The frosting however is crazy sticky, so I ended up with it everywhere after making it.
